You guy love these Chicken Parmesan Meatballs so I knew you would love these decadent meatballs. Marry Me Chicken has taken the world by storm so this is my version mixed with meatballs.

HOW TO MAKE

In a large bowl, mix together the meatball ingredients and roll into balls.

Marry Me Chicken Meatballs
Ingredients
MEATBALLS:
- 1 lb ground chicken
- 1 egg
- 1/2 cup grated Parmesan cheese
- 1/2 cup Panko breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon Italian seasonings
- 1 teaspoon kosher salt
- 1/2 teaspoon pepper
- 1/2 teaspoon crushed red pepper
- 2 tablespoons olive oil
CREAMY SAUCE:
- 1 tablespoon oil from sun-dried tomatoes jar
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- ½ cup sun-dried tomatoes, chopped
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan
- 1 teaspoon dried Italian seasonings
- 1 cup chopped spinach
- 6 leaves basil, torn

Instructions
- In a large bowl, mix together the chicken, egg, Parmesan cheese, breadcrumbs, garlic, Italian seasonings, salt, pepper, and red pepper. Roll into 1 1/2 inch balls (I like to use this scooper). If you're hands are sticking it helps to dampen them with water.
- Heat 2 tablespoons oil in a large skillet over medium heat. Add the meatballs and brown them on each side in the oil. We are just browning them here. They will continue to cook in the pan. Remove from the pan and cover on a plate to stay warm.
- Wipe out pan if there's breadcrumb residue. Heat 1 tablespoon of oil from the sun-dried tomatoes jar over medium heat. Add the garlic and cook for 30 seconds.
- Add the tomato paste, chopped sun-dried tomatoes, chicken broth, cream, Parmesan, and Italian seasonings. Bring to a simmer over medium heat. Add the meatballs back to the pan and cook for about 10 minutes or until meatballs are cooked through and sauce has thickened. Add salt and pepper if needed.
- A few minutes before the sauce is done add in the spinach and basil. Cook until spinach is slightly wilted. Serve with more Parmesan if desired.




This was outstanding! Deep flavor in the sauce, easy to make…I might lighten it up next time – less heavy cream (Maybe fat free sour cream), but it was decadent, easy and very tasty.

It has the right amount of spices and the cream sauce puts it over the top.
