It seems like Marry Me Chicken is having a moment and I’m all in.
However, I needed a crockpot version because of our crazy schedules. When I say you can just throw this in and disappear into carpool world for four hours, I knew you would be in too.
INGREDIENTS
This easy chicken dinner is made with simple ingredients.
- BONELESS SKINLESS CHICKEN BREASTS – I’ve also used chicken tenderloins and love the texture. You can use chicken thighs as well.
- HEAVY CREAM AND CHICKEN BROTH – These make up the sauce which we thicken with cornstarch.
- SPICES – All the spices make this flavorful and savory. Italian seasoning, paprika, and onion powder.
- BUTTER
- GARLIC CLOVES – Minced garlic gives it flavor.
- SUNDRIED TOMATOES – This give the creamy sun-dried tomato sauce all its flavor.
- CORNSTARCH – A quick cornstarch slurry thicken up the sauce.
HOW TO MAKE THIS

Place the chicken in the bottom of a slow cooker.

In a small bowl, whisk together the chicken broth and cornstarch. Pour the broth and the cream over the chicken. Sprinkle with the garlic and the seasonings. Top wit the butter and sun dried tomatoes.

Cook on high for 3-4 hours or on low for 6-7 hours. Stir in the Parmesan cheese before serving. Serve chicken whole or shred if desired. Serve over rice, pasta, or mashed potatoes. Garnish with fresh basil. Store leftovers in an airtight container.

WHAT TO SERVE WITH THIS?
I like to serve this over white rice, pasta, or mashed potatoes. It’s great served with garlic bread and a green salad.

- 1 cup chicken broth
- 3 tablespoons cornstarch
- 3/4 cup heavy cream
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- 1 teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon paprika
- ½ teaspoon onion powder

- ⅓ cup sun dried tomatoes, drained and chopped
- 1/2 cup grated Parmesan cheese
