My son came home from school a couple of years ago and announced that he was gluten-free. From there, in order to support him, we starting experimenting and making all the gluten-free recipes we could in order to find something he would eat. 

Introducing this cloud bread! He ended up loving this bread to make sandwiches for school.

WHAT IS CLOUD BREAD

Cloud bread is soft fluffy bread alternative made from eggs, cream cheese, and cream of tartar. It does not have the texture of regular bread. It can be used for sandwiches.

NUTRITIONAL INFORMATION

Keto is all about low-carbs and each serving of this bread has less than 1 carb.

VARIATIONS

You can add a sprinkle of cheddar cheese to the last minute of baking these for a cheesy twist.

STORAGE TIPS

You can store this bread in a Ziploc bag on the counter for a couple of days. For longer storage, keep in the fridge in between layers of parchment paper so it doesn’t stick.

Cloud Bread

Cloud bread is soft fluffy bread alternative made from eggs, cream cheese, and cream of tartar. This Cloud Bread recipe is gluten-free, low-carb, Keto friendly, and grain free.

Ingredients

  • 3 large eggs, divided
  • 1/4 teaspoon cream of tarter
  • 1/4 teaspoon sea salt
  • 3 tablespoons cream cheese, softened

Instructions

  1. Preheat oven to 300 degrees and line a baking sheet with parchment paper.

  2. Separate egg yolks and egg whites into separate bowls. In a stand mixer (or with a hand mixer), beat the egg whites, cream of tartar, and salt until soft peaks form.

  3. In a separate bowl, mix the egg yolks and cream cheese with a mixer until fully combined.

  4. Gently fold the egg yolk mixture into the whipped egg whites until completely combined.

  5. Spread 8 even scoops of the batter onto the prepared baking sheets leaving space in between each portion. Flatten batter to desired thickness.

  6. Bake for 20-25 minutes or until golden brown. If adding cheese sprinkle on top for the last couple minutes of baking.
