Chicken Enchilada Roll Ups
Chicken Enchilada Roll Ups are a great Mexican appetizer recipe for parties! Easy to make ahead and easy to serve. These are filled with cream cheese, chicken, tomatoes, onions, and cheese.
CHICKEN ENCHILADA ROLL-UPS
There are just a few more days until the kids go back to school and I think we’re both ready for it.
They could eat the same thing every day but I’ve been brainstorming ways to keep their lunches more interesting.
These Chicken Enchilada Roll Ups passed the taste test and will most likely appear in their lunches next week (I froze some for later).
What I love about these is that they can totally be made ahead of time and they are great for parties because you can make a ton in about 15 minutes.
Start by flavoring your cream cheese with some Old El Paso taco seasoning.
Add a can ofdiced tomatoes and green chilies, some cilantro, chicken, cheese, and green onions.
Spread the mixture on a tortilla making sure to get to the very edges and roll it up tight.
At this point you can slice them up and serve or chill them until ready to serve and then slice them up.

Common Questions about these Chicken Enchilada Roll Ups:
- Can I freeze them? Yes. These freeze great!
- Can I use fresh tomatoes instead of canned tomatoes? Yes. Pico de Gallo would be great.
Chicken Enchilada Roll Ups
- 2 (8-oz) packages cream cheese, softened
- 1 1/2 cups shredded Mexican cheese
- 2 tablespoons Old El Paso taco seasoning
- 2 cups shredded chicken, (rotisserie chicken works well)
- 1 (10-oz) can drained diced tomatoes with green chilies, well
- 1 teaspoon minced garlic
- 4 green onions sliced
- 1/2 cup chopped cilantro
- 8 burrito sized tortillas
- In a large bowl, combine all of the ingredients (except tortillas) until well blended.
- Spread about ½ cup of the mixture over the entire surface of a tortilla. Roll up tightly. Repeat with remaining tortillas.
- Refrigerate until firm, at least 30 minutes. Also, if you chill longer they will be easier to cut.
- Slice into 1/2 inch slices with a serrated knife to prevent crushing and serve.
Is Rotisserie Chicken the preferred type of cooked chicken for this recipe (over boiled)?
Hi, any tips on how to make these ahead of time without them getting soggy? How would you suggest to do them possibly the night before for lunch the next day?
They should be fine made the day before and won’t get soggy. just drain the tomatoes well
I make these. Put in 9×13 pan. Add salsa and cheese on top. Cover with foil and put in 325 degree oven for about 40 minutes. So good!!! And leftovers microwave well!
CHICKEN ENCHILADA ROLL UPS. I’m confused or and I missing something lol. Where’s the chicken in these roll ups and how is it prepares?
It’s the fourth ingredient. You can use rotisserie chicken or any cooked chicken you have.
This recipe was simply devoured!!! Everyone loved it and kept asking for more. I made some tweaks to accommodate the ingredients I had (used already marinated chicken and skipped the taco spices + used mild salsa instead of tomatoes and chillis). Kept everything else as is and was delicious. Also tastes very fresh and light despite the cheeses. Would definitely repeat
So happy to hear that!
These are a staple in our house. Any idea how many calories per roll?
61 calories per roll. Of course that depends on the brands you use so for more accurate calories enter in your info in MyFitnessPal
I cam across this recipe and I’d like to make them with corn tortillas. I prefer corn to flour, but uncooked I am no sure. What do you think? I’ll refrigerate them and hope that will soften them enough.
Corn is just harder to roll. A lot harder.
Could you used canned chicken breasts?
Yes. Not ideal but can be used in a pinch.
Yes! I’ve made them the past few years for Christmas Eve, super bowls, etc. & that’s all I ever use. My family devours them! 😁
I’ve made these lots of times, and I think freshly cooked chicken is best. If you want to save time, a rotisserie chicken would probably work.
I’ve been doing THM for years and I have to say I’m excited to see some new recipes ideas! Sometimes I get stuck in a rut!
These look amazing! My kids would love them!
I made these the day before my Grand Daughters first birthday party and they were a big hit. I made and froze them the night before and the next day I packed them in my insulated bag and drove an hour and ten minutes away (96+and humid) and sliced them up when we were ready to put the food out. I don’t like a lot of spice so I used mild Rotel but next time I will try the original ones also I did not use the cilantro as I don’t care for it.
Glad you liked them!
Can I use tuna instead of shredded chicken ??
These were delicious Christy. I’ve made them twice and I’m getting ready to make them for a large crowd. It’s for a music recital with 150 people. I cannot remember how many they make?
I’m so glad you loved them. It makes 80 rolls approximately.
Delicious! I’ve made these 3 times since I’ve discovered this recipe a couple months ago. Thank you!
You’re welcome. Glad you liked it.
I’m making these for a party tomorrow at my workplace. Approximately, how many slices do you get per burrito?
Sorry! usually around 10-12
If freezing in advance – how long before serving do I need to thaw?
I would thaw for at least 2 hours.
Hi. Should you drain the canned tomatoes prior to using them or no? Thank you.
The recipe says to drain it!
Donna, the tomatoes should be well drained!
Do you think this would be good with just the chicken, cheese, and cream cheese and seasoned? My fam is very picky though I would eat it with the tomatoes and chives.
As long as they’re seasoned well. Yes!
I love to cook and bake all the time
What about adding drained black beans and removing the chicken for a veggie version?
Hi, I’m in Australia and we don’t have the tinned tomatoes with the green chillies, do you think I could just use diced tomatoes and add some chopped green chillies? Or just leave out altogether? Thanks.
The green chilies give it spice so I would do the diced tomatoes with added green chiles.
Can I leave out the onions??
Is the minced garlic correct?
Thank you 🙂
Minced garlic is correct and yes you can leave out onions.
I made these, and just wanted to say….. They are awesome!!! My teens and my hubby thought they were great, and I have some picky eaters.
Yours look so big in the picture, and rolling mine ended up so small. Only about 1 inch by one inch. I figured it out though…. overlap two tortillas together and roll up and they are a perfect size and look just like the pic! We’re having them for dinner, but I’m going to make them as appetizers for Christmas, New Years, Super Bowl, etc, etc, etc. Thanks for the yummy recipe!
You’re welcome. Mine are small. I think the pic makes them look bigger than they are.
Trying these today for work potluck!
Hope you love them!
Im getting excited about making these for my ladies bible study tonight!! Im going to tweak it just a but bc they were out of Cilantro..in the Mexican food isle they have dried cilantro..would this work? Also im using a pkg of fajita seasoning..but im not adding the chicken bc i just wanted all the other good stuff!!! Thanks for the recipe!!
Okay i made these..oh my are they epic!! I threw some in the oven…Amazing!!!!!!
if putting in the oven, at what temperature and for how long?
By Mexican Cheese, do you mean a pre-shredded mixed blend of cheeses?
Yes! But any cheddar cheese would work too.
I have made something like this with a package of ranch dressing, chilies, pimentos on burrito tortillas.. Will be nice to have a change with the chicken. Taking them to my family reunion.. They eat anything , so they should go fast
Making this tonight for my grandson’s birthday party!
Hope you enjoy!
I love this recipe! So delicious and great for parties. I’m just wondering about freezing them. I can see from other comments that it’s best to freeze them as a whole roll up. My question revolves more around thawing them. How long do they take to thaw? And do you thaw them in the fridge or on just out on the counter? I’m just wondering for serving purposes, how much time I should plan for thawing 🙂 thanks!
Yes, it’s better to freeze in a roll. Thaw in the fridge or counter depending on what time allows. Good luck! Hard to say how long to thaw – 30=60 minutes?
Making this tonight (roll ups) can tell it will be delicious. Happy Mother`s day to you.
Awww. Happy Mother’s Day to you too.
I made some roll-ups for the week ahead and they got soggy…the tortillas were wettish and mushy. How do I prevent that from happening?
Not these roll-ups but another recipe.
If you’re making these that far ahead of time then you should definitely freeze them until the day of.
These are so easy to make, and so tasty! We are still 2 hours before the start of the Super bowl and they are already getting devoured. Fortunately I have some stashed in the back of the refrigerator to put on the table later. Thank you for sharing this awesome recipe! I made them just as suggested, no changes, and they are great.
Thank you Sharon. That makes me so happy!
Are the tomatoes drained?
This recipe sounds and looks fantastic and I plan to make it for our Christmas Eve get together. Oops, please disregard my initial question, I read the ingredients again. Merry Christmas!!!
YEs! Well drained so that your rolls aren’t soggy.
What’s the the best way to slice these without smashing and disfiguring them
Definitely use a serrated knife and it really helps if they are super chilled in the fridge or even freezer for a bit.
I make several different versions using ham or imitation crab. I always use an electric fillet knife to slice.
First time, it was a Halloween party HIT!!!
Those that have froze these…. did you freeze them before or after you sliced them? Thanks!
Hi Like this Recipe.. Can i use canned tuna or chicken instead.. Thanks 🙁
I think canned chicken would work fine! Tuna – that’s probably a preference thing.
I made these to take to a church picnic and they were so good! Super fast to put together too. Thank you! I love items that I can take to a potluck without worrying about heating them up.
They’re also super good left over!
I love that’s good for potlucks. We need a whole cookbook on it don’t you think?
Would love to try the Mex roll-ups. Do ,you mix it up some special way ? Thank you, Madrue
If the cream cheese is at room temperature you can easily mix it up with a spatula. That’s how I do it.
Can I use canned chicken breast & shred it? I use this for my healthy chicken salad that I make and it’s so easy!!
Sure. That would work great!
Just have to tell you that I made these for a family get together and they were a HUGE hit!!! My 10-year-old grandson called me about 2 weeks later asking me for the recipe! He actually made them and their family has now starting calling them “Mexican sushi”. LOL!! Thanks again for helping to create a new family tradition. :-):-)
Okay Grandma J, you are the sweetest thing ever. I love that he calls it that and kind of wish I would have thought up that name!
PS Christy, you have a bunch of beautiful children and a tall handsome husband. Truly. You are blessed. And, we are going to try your chicken enchilada rollups.
Thank you!! We feel blessed.
Christy, you sure don’t look like ‘the Girl Who Ate everything’ You are a Pretty Pie. And, not to fret. I am 78 years and married to the same precious Lady for 53 years. One of very good and talented Sons is a Chef at the Gage Hotel in Marathon, TX.
Oh thank you. I try to hide it. Haha. Would love to eat your son’s food.
I just make this recipe but I only use 5 tortillas 😬😬😬😬.
I did something wrong????
The party is tomorrow.
It just depends how full you fill the tortillas. Sounds like you filled yours pretty full.
How well do these freeze?
Great! I’ve tried it before!
Has anyone tried freezing these? They are filed under freezer meals but I’m concerned that the cilantro and tomato will turn slimy after freezing. If anyone has done this successfully please let me know. Planning a big graduation party and the more I can do in advance the better!!
These look delicious! My husband does not like tomatoes…could I add pickled or fresh jalapenos in lieu of the can of diced tomatoes and green chilies?
The diced tomatoes add some moisture to the rolls. You’ll definitely have a different flavor if you substitute but it could work.
looks soooo yummy, I will be making these this month for sure!!!!! Thank you
Memorial weekend and were6 doing BBQ fajitas I am to bring several appetizers and this is perfect as we have young kids…easy to eat. Thanks and have a wonderful holiday.
Thank you! Hope you loved it!

Glad you loved!
These are delicious and were a hit with my guests!
So glad they liked them.
Can I use salsa instead of sliced tomato? Or will they beget soggie?
They might be a little wetter but I definitely think it would be good.
What size burrito tortillas should I use?
Burrito sized are usually about 8-10 inches and will usually say burrito sized.
Does anyone have the complex carbohydrates associated to this recipe?
I made these and they were such a hit at our party! YUM! Thanks for this simple and delicious recipe 🙂
Does anyone know the Wight Watcher Smart Point Value on these yummy bites?
Cream Cheese? I think you meant sour cream? Is it still the same quantity?
I made these for an easy lunch for me and the hubby. We both loved them, and he’s one picky eater. He even said I should add these to our menu rotation! Thanks!
Great! I love hearing that.
i make something similar. they’re great as is, but really good when sliced and baked!
Oh that sounds good too!
Does the not have to be warmed or microwaved? 🙂
tortilla * omg I forgot to put that in my question.
No. It doesn’t need to be warmed.
Can I make these the night before and slice the next morning? Thanks
What a great and easy snack/lunch! Bookmarking now!!
How did you freeze them?
I would freeze them in the rolls before you slice them. Put them in a resealable plastic bag.
Perfect !! I have two chicken boobies in the freezer and didn’t have a clue on what to do with them. Now I do 🙂
Exactly what I have on hand to make for tonights get together… great idea. Thanks
Hope you enjoy them!
I love all your recipes – can’t wait to make this one!
Thank you Kim!
Love this recipe. Thank you. Have a good weekend coming up and stay safe!
Thank you Liz!
