BEEF ENCHILADAS

Of course you could make enchiladas with the sauce from scratch and with a ton of seasonings, but that’s just not always in the cards. The good news is you can still have delicious enchiladas without a ton of ingredients.

WHY WE LIKE THESE

  • Uses taco seasoning. Easy peasy.
  • You can use leftover taco meat.
  • Only 6 ingredients.
  • All the flavor with little work.

HOW TO MAKE THESE

  1. Preheat oven to 350℉ and spray a 9×13 baking dish with cooking spray.
  2. In a large skillet, brown the beef over medium high heat breaking up until no longer pink. Drain. Add the taco seasoning and 2/3 cup water. Cook over medium high heat until liquid is almost gone.beef with green chiles
  3. Remove from heat and add the green chiles and 1/3 cup enchilada sauce. Stir until combined.enchiladas with cheese
  4. Fill each tortilla with a 1/3 cup of the meat mixture and top with about 2 tablespoons of cheese. You’ll use about a total of 1 cup of cheese inside all the enchiladas. Roll up and place seam side down in the pan. Repeat with the remaining tortillas.beef enchiladas
  5. Pour remaining enchilada sauce on top of the enchiladas and top with the remaining 1 cup of cheese.
  6. Cover with foil and bake for 15 minutes. Remove foil and bake for 5-10 minutes or until nice and bubbly. Serve with your desired toppings such as sour cream, guacamole, and pico de gallo.beef enchiladas

Ingredients
  

  • 1 lb ground beef
  • 1 (1 ounce) package taco seasoning, (about 2 tablespoons)
  • 1 (4 ounce) can diced green chiles
  • 1 (15 ounce) can red enchilada sauce
  • 2 cups cheddar cheese, divided
  • 8 (8 inch) soft flour tortillas

Optional Toppings: sour cream, guacamole, pico de gallo
