Optional Toppings: sour cream, guacamole, pico de gallo
Instructions
Preheat oven to 350℉ and spray a 9x13 baking dish with cooking spray.
In a large skillet, brown the beef over medium high heat breaking up until no longer pink. Drain. Add the taco seasoning and 2/3 cup water. Cook over medium high heat until liquid is almost gone.
Remove from heat and add the green chiles and 1/3 cup enchilada sauce. Stir until combined.
Fill each tortilla with a 1/3 cup of the meat mixture and top with about 2 tablespoons of cheese. You'll use about a total of 1 cup of cheese inside all the enchiladas. Roll up and place seam side down in the pan. Repeat with the remaining tortillas.
Pour remaining enchilada sauce on top of the enchiladas and top with the remaining 1 cup of cheese.
Cover with foil and bake for 15 minutes. Remove foil and bake for 5-10 minutes or until nice and bubbly. Serve with your desired toppings such as sour cream, guacamole, and pico de gallo.
