GROUND CHICKEN STIR FRY

The truth is that an ideal meal for my family looks like a high protein meal with some kind of veggie with the option to add a carb like some cooked rice.

I have a few low-carb eaters and then the rest who don’t care.

I’m not lying when I say I’ve had this ready to eat in 10 minutes. It’s crazy fast.

INGREDIENTS

 

  • GROUND CHICKEN – You could use ground turkey or ground beef as a substitute.
  • SESAME OIL
  • HOISIN – This can be found in the grocery store in the Asian aisle.
  • LOW-SODIUM SOY SAUCE –  This helps us control the salt in the recipe.
  • RICE WINE VINEGAR
  • GROUND GINGER – Yes, you can totally use fresh ginger here but I always have ground ginger on hand not fresh.
  • GARLIC CLOVES
  • SUGAR SNAP PEAS – I like the crunch this gives but you can also use broccoli or green beans.
  • SRIRACHA – This gives it a little bit of spice.
  • CHILE – Some of my family loves spice so a little of this goes a long way.

MEAL PREP

You can make this for meal prep and it lasts in the fridge optimally up to 5 days in the fridge.

Ingredients
  

  • 1 lb ground chicken
  • 1/2 cup diced red onion
  • 2 cloves garlic, minced
  • 1 cup sugar snap peas
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 1 teaspoon sriracha
  • 1/2 chile pepper, sliced, (optional)

Instructions
 

  • In a large skillet, brown the chicken and onion over medium high heat until chicken is no longer pink. Add the garlic and cook for 30 seconds.
  • Reduce heat to medium, add the sugar snap peas, rice wine vinegar, soy sauce, hoisin, sesame oil, ground ginger, sriracha, and chile pepper if using. Cook for just a few minutes or until sugar snap peas are to desired tenderness. Add salt and pepper to taste. Serve warm plain or over rice.
