Beef Enchilada Recipe

BEEF ENCHILADAS
Of course you could make enchiladas with the sauce from scratch and with a ton of seasonings, but that’s just not always in the cards. The good news is you can still have delicious enchiladas without a ton of ingredients.
WHY WE LIKE THESE
- Uses taco seasoning. Easy peasy.
- You can use leftover taco meat.
- Only 6 ingredients.
- All the flavor with little work.
HOW TO MAKE THESE
- Preheat oven to 350℉ and spray a 9×13 baking dish with cooking spray.
- In a large skillet, brown the beef over medium high heat breaking up until no longer pink. Drain. Add the taco seasoning and 2/3 cup water. Cook over medium high heat until liquid is almost gone.

- Remove from heat and add the green chiles and 1/3 cup enchilada sauce. Stir until combined.

- Fill each tortilla with a 1/3 cup of the meat mixture and top with about 2 tablespoons of cheese. You’ll use about a total of 1 cup of cheese inside all the enchiladas. Roll up and place seam side down in the pan. Repeat with the remaining tortillas.

- Pour remaining enchilada sauce on top of the enchiladas and top with the remaining 1 cup of cheese.
- Cover with foil and bake for 15 minutes. Remove foil and bake for 5-10 minutes or until nice and bubbly. Serve with your desired toppings such as sour cream, guacamole, and pico de gallo.

- 1 (15 ounce) can red enchilada sauce
- 2 cups cheddar cheese, divided
- 8 (8 inch) soft flour tortillas
