Peanut Butter Oatmeal Chocolate Chip Cookies
Now that I’m a mother of four one of the most common questions is, “How is life with four kids?” My answer changes depending on the day and sometimes the hour. Some days I feel like I have it together and other days I feel like a mad woman pulled in all directions losing my mind.
Last week I was feeling awful. I had severe fever and chills and my whole body ached. My OB told me to come in if I ever had those symptoms since it could be a sign of infection. So I grabbed the last appointment of the day and with all FOUR kids in tow, hurried to his office.
Turns out I just had the flu. After a lecture from my doctor about doing too much and stern instructions to take it easy, he asked, “Do you have help or a nanny at home?”
It was all I could do to not laugh out loud. I was thinking the obvious. If I had a nanny at home, do you think I would be at the gynecologist with four kids?
They say the “Joy is in the Journey”. I know that’s true and I’m reminded daily by the funny things my kids say and the kisses they give me. But sometimes I feel like I’m on a journey to Crazy Town.
People always ask how I find time to bake. I think we all find time for the things we love whether it be reading, running, or Pinterest :). Baking is therapeutic to me. It relaxes me and it’s something my kids and I can do together.
Sunday nights always draw me into the kitchen begging me to make some cookies. Usually it’s these cookies but last night I needed peanut butter and chocolate. Peanut butter and chocolate are like my own personal Xanax. These Peanut Butter Oatmeal Chocolate Chip Cookies have oatmeal, peanut butter, and chocolate chips which makes for some dangerous dough.
Peanut Butter Oatmeal Chocolate Chip Cookies
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup 1 stick unsalted butter, at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup rolled oats
- 1 cup semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
- Whisk together the flour, baking soda and salt; set aside.
- On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips.
- Use a large cookie scoop (3 tablespoons) and drop dough onto prepared baking sheets about 2 inches apart. Bake for 9-10 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet and then store in an airtight container at room temperature. Makes 16 cookies.
Notes
I have made these 5 times in the last few months since finding this recipe. They are D to the Lish!!!! My husband and I fight over them. I’ve doubled the batch and frozen some and they have been amazing every time. They are my new go-to cookie recipe and since they are so simple I am sure they will be popping up in our house all too often! Thank you for this amazing cookie recipe. I really like that it makes a relatively small batch so I’m not sitting there cooking cookies all day and also not eating 5 million of them. I am not exaggerating when i say that my husband ate 6 this evening. I won’t share how many I ate… 😉
You’re my kind of girl. I can blink and eat 6 cookies. So glad you love these!
Searched your site for anything delicious that I already had the ingredients for! Delicious! Thanks very much, you have brightened my fed up with pregnancy/always hungry day!
Ooh. I’m very familiar with those days…
Thank you so much for the recipe! I moved to Germany with my husband and 2 year old 3 weeks ago. I don’t speak German well so it’s been rough… Baking (&cooking) is soothing to me too, but I can’t find shortening at the store and all my personal recipes call for it… So I tried your recipe (minus choc chip because they don’t sell them here) and oh they are SO good! Thanks for helping cure some home sickness. 🙂 cheers& God bless you!
My 9 year old son had some friends spend the night last night and I made these cookies for their dessert. I had some mini M&Ms leftover so used half a cup M&Ms and half a cup choc chips just for some color and fun. The boys loved them and one asked me to teach his mom how to make them 🙂 These are definitely a new family favorite! Looking around your site I can tell I will be back often- everything looks delish yet easy enough for a semi-amateur chef like me to make! Thanks!!
These look delicious, I just printed out the recipe to make them soon. Oatmeal/chocolate is one of my favorite combinations and peanut butter just makes it even better!
I have enjoyed reading your blog for several years now – thank you for the wonderful recipes and I love reading about your life. You seem like an awesome person! 🙂
Thank you. It’s nice to meet you!
Just made these this afternoon and they are absolutely DELISH! They got two thumbs up from all the people I served them to and they are definitely going on my ‘favourite cookie recipe’ shortlist! Loved the combination of peanut butter and chocolate, with the oatmeal to make them extra chewy and fabulous. Thanks so much for sharing this recipe!
vHdyNE I truly appreciate this blog.Really looking forward to read more. Fantastic.
Thanks for providing some food for thought with this post.
Found this recipe via Pinterest and I think it must be the perfect cookie. Peanut butter, oatmeal, and chocolate all together? I’m in heaven! Thanks for the recipe!
I made these cookies yesterday and wanted to let you know that they are awesome. With a regular, small cookie scoop, I stretched the dough to 27 cookies. They were crispy on the outside and soft in the middle. This one went on a recipe card — a keeper.
I have 3 kiddos all super close in age and your words remind me SO much of myself 🙂 Now that they’re all in school I’m finding that life is becoming a “different” kind of busy! I’ll always find time to do the things I love: baking, running, pinterest :)…that’s what keeps us mommies going, right??
@Katie, I’m glad I’m not the only one. Sometimes I feel like Im being punked. Haha! Thanks for making me feel normal.
Dear Mother With The Other Ticket To Crazy Town,
I too am making the winding trip to crazy town and in the middle of my trip — I found your blog.
Girlfriend — I’m already a fan! Just in this post alone, not only can I tell that we have a similar sense of humor, but the same love for baking & food! I have a feeling your blog and I are going to be great friends! 😉
I also love how you incorporate your family stories into your recipe shares! Brilliant!
And the best part — I laughed out loud about your gynecologist asking you if you had a nanny, after dragging the 4 kiddos to his office! What a nit-whit! And yes, it’s so true — us mom’s sure do manage to make the time we need to keep sane, doing the things we love {pinterest & baking is on my list too!}.
I’m looking forward to reading about your adventures in motherhood and recipes to come! 🙂
