Homemade Chicken Noodle Soup
Homemade Chicken Noodle Soup recipe is a tried and true comfort dinner with carrots, celery, onions, chicken, and homemade noodles. In this soup recipe, I’ve included an easy recipe for homemade noodles that makes it even better!
HOMEMADE CHICKEN NOODLE SOUP
After Halloween, I usually never want to eat again. At least that’s what I tell myself and then at 4 pm I’m like hmm, I could go for a Twix. What is wrong with me?
Of course this pattern isn’t new. Ever since I was a little girl I would eat my candy as I went trick or tricking until I had a stomachache and my mom would fix me chicken noodle soup at the end of the night.
Can I tell you that homemade chicken noodle soup has always been super intimidating to me?
My mother-in-law has always killed it this department, whipping it up like it was taking the dishes out of the dishwasher…just something you do.
But for some reason I could never get it right. The broth/chicken ratio. The noodles. I tend to do this with cooking. For instance, cooking rice was super intimidating to me 10 years ago. Something so simple yet I always under or overcooked it.
Turkeys are still overwhelming to me. Doesn’t help that my oven is tiny and I can’t really fit anything in it, even the smallest turkey. That will be my next thing to conquer.
Today, it’s this soup. I don’t know why I complicated it so much. It’s veggies, broth, and some seasonings – not rocket science.
I always felt like an ingredient was missing but now I’m completely satisfied with this chicken recipe.
HOMEMADE NOODLES
The thing that takes this over the top are the homemade noodles. You can totally use store bought egg noodles. I don’t love them but if that’s all you have – it will work.
If you’re lucky enough to have those Grandma egg noodles in your stores, they are good too.
But seriously, I’m not one to make my own sandwich bread or anything like that but you guys…these homemade noodles are so easy. No yeast. You can totally do it.
I like my soup heavy on the noodles.
After you roll them out and cut them you separate them and let them dry out. You can make any shape you want. Make it fun!
Remember they will get a little larger when you cook them so don’t make them too long or thick.

WHAT IS IN CHICKEN NOODLE SOUP
The ingredients in this soup are simple: chicken, carrots, celery, onions, noodles, broth, and herbs.
- CHICKEN: You can use rotisserie chicken or cook your own from chicken breasts or thighs.
- BROTH: The chicken broth is the base of this soup. I like to use Better than Bouillon Base because of it’s rich flavor. You could make your own homemade chicken broth if you want.
- VEGETABLES: Carrots, celery, and onion are the classic veggies in chicken noodle soup. Feel free to add your own.
- NOODLES: Homemade egg noodles do not take that long and take this soup to the next level! If you’re running short on time, store bought egg noodles will work.
CAN I MAKE THE NOODLES AHEAD OF TIME?
Yes. You can dry out the noodles up to a day ahead. You also don’t have to dry them out if you don’t have time.
HOW TO MAKE CHICKEN NOODLE SOUP
INSTRUCTIONS

For the noodles: In a large bowl, stir together the flour and salt. Add the beaten egg, milk, and butter. Knead dough until smooth, about 5 minutes. Let rest in a covered bowl for 10 minutes.

On a floured surface, roll out to 1/8 or 1/4 inch thickness. Cut into desired lengths and shapes.

Separate and allow to air dry before cooking.

For the soup: In a large pot over medium heat, melt butter. Cook onion, celery, and carrots in butter until just tender, 5 minutes. Add the garlic and cook for an additional minute. Pour in chicken broth and stir in noodles, basil, oregano, (optional) poultry seasoning, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes. Add the chicken and cook until heated through. Serve.

Homemade Chicken Noodle Soup
This Homemade Chicken Noodle Soup is a tried and true comfort food with carrots, celery, onions, chicken, and homemade noodles. You can make this soup in under 30 minutes!
Ingredients
- Egg Noodles:
- 1 1/4 cups all-purpose flour
- 1 pinch salt
- 1 egg , beaten
- 1/4 cup milk
- 1/2 tablespoon butter , softened
- 2 tablespoons butter
- 3/4 cup chopped onion
- 3/4 cup chopped celery
- 1 cup sliced carrots
- 2 garlic cloves , minced
- 9 cups reduced sodium chicken broth (see note)
- 2 cups uncooked egg noodles (store bought or homemade recipe above)
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- (optional) dash of poultry seasoning
- salt and pepper to taste
- 2 cups cooked and shredded chicken breasts

I really like the Better Than Bouillon Chicken brand for my chicken broth. It's a paste that you add water to.

Love this recipe! I doubled it, as we have 5 kids! I had the girls help me make the noodles into stars with a little star cookie cutter. It’s so cute and a hit at home! We live in Mississippi, so it’s not exactly cold out, but we are all sick and this helped so much! I will be making this on cold nights too. (If we ever get them! Hah!) This was simply delicious. Instead of chicken broth and only chicken breasts, I used a rotisserie chicken. After removing and shredding both the white AND dark meat, I cooked down the bones for hours to make a dense and delicious base. Other than that, I followed the recipe, including the home-made noodles. Simply delicious!

How do you make the shredded chicken?
I boil chicken breasts and once fully cooked, put the chicken in a bowl and shred with with an electric mixer! Takes seconds to shred! Best hack ever! Enjoy!
I use a rotisserie chicken or you can boil chicken in chicken broth with salt and pepper then shred.

Love this recipe! Very simple and the noodles are amazing. Easy to also put your own flavors into the soup! Quick, easy, and delicious! I was very worried about how the noodles would turn out, but to my amazement that were terrific and so simple to make!! The best part was that I already had all the ingredients at home!!!

I neglected to mention I bought a huge rotisserie chicken from walmart, shredded it and used that for the chicken. It’s cheaper and much easier.

Make it to the recipe, just added leeks and more random spices I had in the cupboard. I made enough for dinner for two plus brought a lot to work the next day. It was the first soup I have ever made and it was a hit! Really fun to make the noodles, I just would have made them smaller. Dried the noodles for about 2 hours and used 3 chicken breasts that I boiled. I would have added more carrots celery and onion but I also grew up in a house that over does veggies. I just love to add as many as possible. Maybe even some jalepeno next time. Thank you though everyone loved it!

I would use rotisserie chicken, grill it, cook it on the stove for 3-5 minutes per side, or boil it!

This is a great recipe! I cook a full chicken in the instant pot and then use the bones, skin and left over juice to make the chicken stock. The stock is also made in the instant pot.

There is nothing heartier than a bowl of chicken noodle soup on a cold night! My dad used to make this weekly – sure brings back memories! And when I was in Canada, we used to make sandwiches to dip in it. Looking back, it was weird…but it’s so good! It was a BLT (made w/ miracle whip). You wouldn’t think they’d go together, but they were amazing!

How long can I let the noodles dry? Can I make the noodles the day before I make the soup and just keep them covered and in the fridge overnight, or is that too long?

True story: I made this soup with leftover turkey from thanksgiving and gave it to my mother the day she came out of surgery to remove large masses of cancerous cells. She told me this soup cured her cancer. Cancer free 2 years this week! I make it at least once a month, and it is everyone’s favorite.

When you are making your egg noodles, you don’t need a frame…you can just roll then out on a counter or tabletop,,,,cover with clean dry dishcloths and let dry…..the soup will freeze well, however just freezing the egg noodles for an extended period of time is not advised….I have dehydrated them however…..duh….that is what store bought noodles are…
