Guacamole

I love avocados. My mom used to spoon feed them to me as a baby. Even now, I’ll sprinkle some salt on and avocado and eat it with a spoon. An avocado is technically a fruit and of course my favorite “fruit” is the one with the most calories and fat. Good fat they say. Whatever makes me feel better.

I was craving guacamole and whipped up some to go with these Honey Lime Enchiladas. I know everyone likes their guacamole different but this is how we like ours. Sometimes I add some finely diced jalapeno for some heat but most of the time I leave it out.

I like mine on the chunky side.
1) Halve each avocado and remove the pit. 2) Scoop out the flesh with a spoon. 3) Then coarsely chop it.
Slightly mash the avocado then add onion, tomato, cilantro, garlic and some lime. Then salt and pepper it to taste…which for me these days is never enough. I love to put a ton of salt in everything since I’m pregnant.

Guacamole

Ingredients

  • 4 ripe avocados
  • 1/2 cup red onion, diced finely
  • 2 roma tomatoes, seeded and diced finely
  • 1/4 - 1/2 cup cilantro, chopped finely
  • 1 lime, juiced
  • 1 teaspoon minced garlic
  • salt and pepper to taste
  • (optional) 1/2 jalapeno, seeded and diced finely

Instructions

  1. Cut avocados in half and remove pit. Scoop out flesh of avocado and coarsely chop it. Place in a large bowl and slightly mash with a fork. I like mine on the chunky side. Add the diced onion, tomatoes, cilantro, and garlic and toss together with the avocados. If you like your guacamole on the spicy side add some diced jalapeno here.
  2. ?Add the lime juice, salt, and pepper to taste.
  3. Chill until serving. If not serving right away place saran wrap directly against the guacamole so that it does not oxidize and turn brown. Serve with tortilla chips.

  1. Here’s a little trick that a good friend of mine taught me. Put the pit back into the guac so that it doesn’t turn brown. It works (even better than lime juice)!

      I’m glad I’m not the only one that does this cause everytime I make it and people eat it they look at me funny cause the pits are in it!! It really does work. My mom does this, My grandma does it and now I do it…..

  2. The guacamole I make most often has three ingredients and I eat it all in one sitting by myself: 1 avocado, 1 roma tomato and 2 minced cloves garlic. But sometimes I get fancy and add jalapeno, onion and a little lime juice. Yours looks good for when I’m not so lazy!

  4. I, personally add 1 tablespoon of garlic to my gauc… adds for some yummy dip and yucky breath!

  8. sounds YUMMY! I LOVE avacado too! I think I may just try this! sounds simple-something I can do and I DONT COOK! ha

    Just a suggestion-be careful with loading on the salt while being pregnant. Salt can make you swell and just also not sure if I mentioned but check out preeclampsia.org.

    I had preeclampsia twice, got very sick in my f irst pregnancy and was able to get further on in my 2nd. best of luck to you mama! thanks for sharing!

    Thanks for the warning. Does it help if I balance out the salt with a bunch of sugar! JK. I have had friends with preclampsia and it is definitely no fun and dangerous. I will try to lighten up on the salt…

  18. that’s exactly how we make it too. love it. except here in Louisiana we add cajun seasoning or season salt if you have that (instead of S&P).

  19. Couldn’t you just make a meal out if guacamole and chips?I add fresh cilantro and sometimes a scoop of black beans if I’m feeling healthy! Yours looks great!

  24. At the risk of sounding like a freaky food nerd – Avocados contain mono-unsturated fatty acids (MUFA for short). That’s the fat that attacks stored belly fat. It’s also in olives, nuts, and oils. Basically, we like mufa’s. Mufa’s are our friends!
