- FROZEN SPINACH – It’s important to squeeze as much moisture as you can out of the spinach after it’s thawed.
- CREAM CHEESE
- MONTEREY JACK CHEESE – You can really use any cheese here. Mozzarella, cheddar, or even a spicy Pepper Jack would be good.
- EGGS
- PARMESAN
- BUTTER
- GARLIC
- SALT

Ingredients
- 1 (12 ounce) package frozen spinach, thawed and squeezed dry with paper towels
- 4 ounces cream cheese, softened
- 1½ cups shredded Monterey Jack cheese
- 6 large eggs, , beaten
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter,, melted
- 2 garlic cloves, minced
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350 degrees F and grease a 9" baking dish, square or round.
- In a large bowl, add all of the ingredients and stir together well.
- Bake for 35-45 minutes or until the center is set.
