Ranch Roasted Red Potatoes

My husband’s friends often come over to go fishing on our little boat in the water behind our house. It seems like it’s always around dinner time so I usually invite them over for dinner afterwards and sometimes they stay and sometimes they don’t. But I always try to have some items on hand that I can fix quickly to add some bulk and variety to our dinner just in case. That’s how these potatoes came about.

I quickly scanned Pinterest for a red potato recipe to make a filler for our dinner and spotted these Ranch Roasted Red Potatoes. They took less than 5 minutes to prep. They’re roasted with a dry ranch seasoning mix. I’m not much of a potato girl and I loved these perfectly seasoned potatoes. Super easy and inexpensive!

Servings: 4 servings
  • 2 lbs red potatoes , washed and quartered
  • 1 .4 ounce packet Ranch salad dressing and dry seasoning mix
  • Olive oil cooking spray or olive oil
  • 1 teaspoon salt
  1. Preheat oven to 425 degrees.
  2. In a large bowl add potatoes and spray lightly with the cooking spray or drizzle with a little olive oil if you don't have olive oil cooking spray. Then, add in the Ranch dressing mix and salt. Toss well to coat each potato piece evenly.
  3. Line a baking sheet with foil or spray it with non-stick cooking spray. Pour potatoes onto the baking sheet and spread out potatoes evenly.
  4. Bake in oven until potatoes are cooked through, and edges start to turn very dark brown, approximately 20-25 minutes. To check to see if they are done, pierce one of the larger pieces of potato with a fork to see if it is soft.
  5. Serve immediately.

  6. I can’t wait to try this! I make these a lot with salt/pepper/garlic salt/Parmesan and italian seasoning but ranch flavored sounds soooo good. My family is going to love this!

My mom was telling me once that she remembers when ranch dressing was invented back when she was a little girl. I said, “but mom, what did you DO before that??” she said, “I don’t know, Karen…I don’t know.” Long live ranch!!

    I think they would still have good flavor but wouldn’t have that yummy roasted texture that I love.

  19. Can you make the ranch mix like your other pre-made mixes (brownie, biscuit, pancake, gingerbread, etc)?? Because that would be phenomenal – my husband doesn’t like chili powder, so any recipe calling for chili powder or taco seasoning, we substitute a ranch packet (or fiesta ranch packet) but those run almost $1.50 each!

  22. Ranch seasoning can be bought in bulk shaker-top style bottles, and is very affordable! I got ours at BJs, and they’re available online. 3T is equivalent to one packet.

  23. I really wanted these to work but had to add more and more powdered Ranch. Won’t be making these again.

  24. can you use the bottled already made up salad dressing instead of the dry mix? if so,would you dilute it or just straight from the bottle?

  25. Delicious! I added some spinach to the potatoes and onions just to add a bit of veggies, I also used turkey bacon and just cut it into small pieces. Topped it with green onion instead of parsley, hubby and I both loved it!
