Lemon Brownies

LEMON BLONDIES RECIPE
These delicious lemon brownies aren’t just a little lemony. These are packed full of fresh lemon flavor for the lemon lover. They have a sweet lemon brownie base with a simple lemon glaze on top. The total opposite of these chocolate fudgy brownies.
A sweet batter with the best chewy texture. There’s no baking powder so it has the texture of a fudgy brownie.
You must use fresh lemon juice, not the bottled lemon juice.
They kind of taste like the Lemonheads candy that I used to eat by the pool when I was little. Or these Lemon Drop cookies.
SIMPLE INGREDIENTS
- FRESH LEMONS – No lemon extract here, just fresh lemon zest and juice of lemons are used in this to give it its bright lemon flavor.
- GRANULATED SUGAR
- SEA SALT
- BUTTER – you could use melted butter for an even more fudgy texture.
- EGGS
- ALL-PURPOSE FLOUR
- POWDERED SUGAR – This makes the sweet glaze.
HOW TO MAKE THIS
- Preheat oven to 350 degrees. Spray an 8X8 inch square pan with cooking spray and set aside.
- Zest and juice 2-3 large lemons depending on what size they are; set aside.
- In a large bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined.
- In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined. Pour wet ingredients into the flour mixture and beat at medium speed until smooth and creamy, about 2 minutes scraping down the sides of the pan.
- Pour into baking dish and bake for 20-25 minutes, or until just starting to turn golden around the edges and a toothpick inserted into the center of the brownies comes out clean. Allow to cool completely before glazing. Do not overbake or the bars will be dry.
- When brownies have cooled completely, make the glaze. Sift the powdered sugar, add lemon zest and juice, and whisk together all three ingredients. You can add more powdered sugar or lemon juice here depending on the consistency you like. Spread 1/2 the glaze over the brownies with a rubber spatula. Let glaze set. I sped up this process by throwing them in the fridge. Spread the remaining glaze over the bars, and let it set. Once again you can speed this up by placing them in the fridge. Cut into bars, and serve. Makes about 24 small brownies. Store brownies in an airtight container.

Ingredients
- 3/4 cup all-purpose flour

As I live in Australia our conversions will be quite different from US “cup”etc. Do you have a link in your site to convert to grams please? We don’t measure butter by “cups or sticks”& I don’t want to destroy what will be a fabulous recipe. Thanks

Have made this recipe more times than I can count – it’s also a staple on my wholesale list for a couple of small coffee houses. Has anyone tried a key lime version? I’m thinking about giving it a tray…it’s summer and I want to take something different to the farmers markets.

Yes, I too have experienced the greeting problem as I stood in my sisters wedding line in Long Island NY. She married into an Italian family. Lovely family but I felt I needed to wash my face afterward. Funny all the cultural differences right here in the USA. Makes you realize just what a vast and diverce country we live in. Haha! Ah different customs in different places! These ‘brownies’ remind me of a citrus ‘blondie’ that I used to make (why I haven’t made it in ages I don’t know) and now have me craving them!
I grew up in Miami, moved to Port Saint Lucie (aka hell) 6 years ago. I don’t know where you are, but the only protocal I have ever noticed is in Miami if you are hispanic you are forced to kiss everyone on the way in and the way out. I try to avoid that, as kissing a bunch of people I see all the time and some of which I don’t even like is not my idea of fun. The thing you describe I haven’t really noticed. I only hug people I haven’t seen in a long time. We do have friends from NJ that do kind of what you describe and there are a lot of northerners in FL so maybe that is where it comes from.

LOL this hit home with the greetings! As an Arab, I face this problem so very often because we greet with kisses as well but each person greets with a different number of kisses so you never know when to stop or to go for more so there’s always that awkwardness. And then add to that not knowing what cheek to start with so there’s the occasional accidental making out all the time.
