Jalapeno Cheddar Cornbread

CHEDDAR JALAPENO CORNBREAD
This is the perfect sweet and savory side to soups, chilis, you name it.
JALAPENOS
You may want to use plastic gloves when handling the peppers to prevent burning.
Trust me, I’ve learned my lesson the hard way. Do not touch your eyes or face or anywhere really!
HOW TO MAKE THIS

Preheat oven to 375 degrees and spray a 9X9 baking dish with cooking spray.

In a bowl combine the butter, eggs, sugar, and buttermilk. Add the cornmeal, flour, salt, baking powder, and baking soda. Mix well.

Stir in the cheddar and jalapenos. Pour into the baking dish and bake for 30-35 minutes or until top is barely golden brown and center is set.
Cut into squares and serve with butter and honey.
BUTTERMILK SUBSTITUTE
If you don’t have buttermilk you can add 1 tablespoon of vinegar or lemon juice to each cup of milk and let it sit for a couple of minutes.

CAN I MAKE THESE INTO MUFFINS?
Yes. Just grease a muffin tin and fill the cups 3/4 of the way full. Bake the corn muffins for 12-15 minutes or until the center is set.
CAN I DOUBLE THIS?
Yes. This can be doubled in a 9×13 pan.

- 1 large jalapeno, seeded and diced
