INSTANT POT CORNED BEEF

My husband makes this corned beef about once every two weeks because he loves it so much. Of course he eat it with all of the fixings: melted Swiss cheese, sauerkraut, thousand island dressing, and a fried egg on top.

I finally told him he needed to write down the recipe so all of my low-carb Keto readers could make it too! Corned beef isn’t specific to those diets and is always popular during St. Patrick’s day.

HOW TO COOK CORNED BEEF

  1. Place onion and garlic in the bottom of the Instant Pot. Place the corned beef brisket on top and sprinkle with spice packet the beef came with.

  2. Add enough chicken broth to cover the brisket completely.

  3. Select the manual setting on your Instant Pot; Adjust pressure to high and set the time for 90 minutes. When finished cooking, use the quick release method.

  4. When cool enough to remove, slice against the grain or shred the corned beef depending on your preference.

DON’T HAVE AN INSTANT POT?

If you don’t have an instant pot there are other ways you can cook this corned beef.

  • SLOW COOKER INSTRUCTIONS – Cook the corned beef in a slow cooker on low for 6-8 hours or on high for 4-6 hours.
  • STOVE TOP INSTRUCTIONS – Bring mixture to a low simmer on the stove top and cook for 50 minutes per pound.
