SNOW GLOBE COOKIES

I attended a Christmas cookie exchange last year and someone brought a version of these snow globe cookies. They did store bought frosted cookies and decorated from there.

Although a homemade version is better in my opinion, you could totally do it either way.snow globe cookies

HOW TO MAKE A SNOW GLOBE COOKIE

  1. Bake your favorite sugar cookies into circle shapes. Let cool.
  2. Frost with your favorite frosting.
  3. Decorate with sprinkles, edible snowmen or other Christmas figures.
  4. Top with a plastic snow globe or a clear ornament half. I like to use about 2.4 inch size domes. Note: I don’t like that the snow globes have a thick bottom so I cut them off. The clear ornaments sit lower and don’t have to be modified. I bought mine from Amazon but Walmart has them too.snow globe cookies

  • In a large bowl, cream together butter and sugar with a stand mixer with the paddle attachment until light and fluffy. You can also use a hand mixer.
  • Add vanilla and egg and beat until combined. Scrape the bowl with a rubber spatula.
  • Add flour, baking powder and salt. Beat in dry ingredients on low speed until combined with the wet ingredients.. Mixture may seem dry at first but will come together in a ball after a while.
  • Divide dough in half and shape each portion into a flat disc. Wrap in plastic wrap.
  • Chill dough in the fridge for at least one hour. This helps the cookies hold their shape when baked.
  • Preheat oven to 350 degrees F and line baking sheet with parchment paper.
  • Remove dough from fridge and let rest for 5 minutes at room temperature to soften making it easier to roll.
  • Roll each disc out with a rolling pin on a floured surface or parchment paper to 1/4 to 1/2 inch thickness. The thicker your cookie the softer it will be. If you like a crisp edge, make your cookies thinner.
  • Cut out with cookie cutters and place on prepared baking sheet 2" apart.
  • Bake for 8-11 minutes or until cookies are not glossy and edges are just starting to turn golden brown. Cooking time will vary with your oven and the thickness of your cookie. Remove from the oven and let sit on the cookie sheet for a few minutes before cooling on a wire rack.
  • For the frosting: In a large bowl, mix together cream cheese and butter in high speed until light and fluffy.
    Add the vanilla extract, almond extract, and powdered sugar. With a stand mixer with the whisk or paddle attachment or hand mixer, mix on low speed until ingredients are combined. Bring mixture up to a higher speed and beat for 2-3 minutes or until light and fluffy scraping down the sides as needed with a spatula. You do not need to but you can add some milk and cream to thin it out to your desired consistency. Spread or pipe frosting on cooled cookies.
  • Decorate with sprinkles, edible snowmen or other Christmas figures. Top with a plastic snow globe or a clear ornament half

Notes

I don't like that the snow globes have a thick bottom so I cut them off. The clear ornaments sit lower and don't have to be modified.
