Peanut Butter Oatmeal Chocolate Chip Cookies
Now that I’m a mother of four one of the most common questions is, “How is life with four kids?” My answer changes depending on the day and sometimes the hour. Some days I feel like I have it together and other days I feel like a mad woman pulled in all directions losing my mind.
Last week I was feeling awful. I had severe fever and chills and my whole body ached. My OB told me to come in if I ever had those symptoms since it could be a sign of infection. So I grabbed the last appointment of the day and with all FOUR kids in tow, hurried to his office.
Turns out I just had the flu. After a lecture from my doctor about doing too much and stern instructions to take it easy, he asked, “Do you have help or a nanny at home?”
It was all I could do to not laugh out loud. I was thinking the obvious. If I had a nanny at home, do you think I would be at the gynecologist with four kids?
They say the “Joy is in the Journey”. I know that’s true and I’m reminded daily by the funny things my kids say and the kisses they give me. But sometimes I feel like I’m on a journey to Crazy Town.
People always ask how I find time to bake. I think we all find time for the things we love whether it be reading, running, or Pinterest :). Baking is therapeutic to me. It relaxes me and it’s something my kids and I can do together.
Sunday nights always draw me into the kitchen begging me to make some cookies. Usually it’s these cookies but last night I needed peanut butter and chocolate. Peanut butter and chocolate are like my own personal Xanax. These Peanut Butter Oatmeal Chocolate Chip Cookies have oatmeal, peanut butter, and chocolate chips which makes for some dangerous dough.
Peanut Butter Oatmeal Chocolate Chip Cookies
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup 1 stick unsalted butter, at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup rolled oats
- 1 cup semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
- Whisk together the flour, baking soda and salt; set aside.
- On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips.
- Use a large cookie scoop (3 tablespoons) and drop dough onto prepared baking sheets about 2 inches apart. Bake for 9-10 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet and then store in an airtight container at room temperature. Makes 16 cookies.
Notes
I just baked these cookies. They are officially one of the best cookies I have ever eaten. Thanks for sharing. 🙂
Kristy, these were just what I needed tonight! Oh so good. The whole family is happily eating away right now. Thanks for another great recipe.
These look awwwwwesoooooome!
And I just had to say oh my how funny is that doctor for asking you that question?! “Yes, I let my nanny have the afternoon off so I could bring my kids to the most fun doctor appointment in the world!” Hilarious!
I follow lots of blogs but rarely ever comment. I too have 4 kids and I have to say its great to hear that someone else feels exactly the same way I do. Do you have those moments when you feel like you have no control of your life? One day I was in the store and an older woman smiled and came up to me. I thought she was going to say something like “enjoy them while they are young” but she didn’t. She said, “They will grow up and this time will end, and it is so wonderful!” Made me laugh! By the way I lOVE your blog and have made MANY of your recipes. Thank you so much for sharing!
Here’s a tip to make them even more soft and moist…
Add 3/4 package of a vanilla pudding mix, to the flour mixture.
With that said, these cookies are amazing.
Madrid,
I would love to have a translator on the side. I’m not sure how to do that though. What language would you like it translated to or do you just want a cups to grams conversion?
Could you hear me screeching to a halt as I scrolled by your post? These are my hubby’s favorite cookie and I haven’t been happy with the recipe I pulled from the net. I’ll be giving this a try. Happy baking (:
P.S. The word verification if “my rave” …funny.
Yum….these look amazing! I just made a similar recipe and added trail mix: http://www.partydish.net/peanut-butter-cookies/ ‎

The cookies look perfect!
I saw these on another blog, but never made them. Today, after finding your blog through another’s, I knew I just had to do it!!! They’re done, and they are SO good (good, and almost gone, in fact). I’m enjoying trying all kinds of recipes– something I seldom had time for before this year. My ‘baby steps’ blog, http://milkmaidrecipebox.blogspot.com/ has been a fun/easy way for me to share recipes with our kiddos who are now ‘spread out’ (out-of-state). I think your blog is super GREAT– I have subscribed.
These look perfect! Thick and chewy, just how I like my cookies!
I don’t have 4 kids but I know we all have *those* days were everything goes wrong and the only thing to make things better are cookies!
Thanks for the giggles! I have four too. 16, 13, 12 and 9. I always enjoy your posts full of humor! My daughter and I say we are really fat girls in skinny girls’ body. We love to eat! Thanks for all the inspiration.
OMG, I want kids SOOO much. I want 4 little baby kids so I can make these cookies. You’re such an inspiration to me. Please trade me lives, PLEASE!!
Chocolate and peanut butter is definitely one of the most therapeutic food combinations. Thanks for the great recipe!
Some people have NO filter when it comes to personal questions like that. It drives me crazy.
I also agree that people find time to do the things that they love, no matter how busy they are.
I hope you are feeling much better this week! I seriously can barely blog with zero kids, let alone 4! Amazing.
I have been eyeing these cooking on BEB for awhile now, they look so good!
Funny, i use the same meds! Can’t have enough peanut butter oatmeal cookie recipes!
I love your blog and your recipes. After reading this post I admire even more, with 4 children and the work that gives a house. I have only two problems, first, I am not able to make your recipes because I find the conversion from cups to grams, each website gives a measure, and second, it would be possible to put on the side of your page a translator. Thank you very much and greetings from Madrid
Yum! you basically combined all three of my favorite cookies into one!
Whoa, Nelly! These are definitely not goof for my diet. There’s something so comforting about oatmeal in a cookie…
i have 5 kids so i completely understand.. i love it when people ask that dumb question of do u have help at home.. r u kidding me..cookies and brownies are my antidepressant along with my treadmill and a dr. pepper.. u can make it.. like u said sometimes it is taking it day at a time or sometimes even a min or hour at a time.. sometimes all u can do is just breath..
Mmm perfect in my opinion! Yum!
Nanny. Ha ha ha.
Where was this post earlier today when I made cookies? I combined a chocolate chip and oatmeal cookie recipe for an okay variation. Oh well. Now I can see where I went astray.
These look so good!!! i want some right this very moment!
love K
I make pb choc chip oatmeal cookies too..because I decided it combined 3 fave cookie recipes all in one and I don’t have to pick among favorites.
These look wonderful!
I can relate to this post so much. I have five kids and when I have a challenging day I want to bake and I want to bake cookies and cookies with peanut butter! We will definitely make these soon.
Well I just happen to have all of these ingredients on hand. What a shame! 🙂
