CORN, TOMATO, AND FETA SALAD
Nothing screams summer like this salad. It’s so fresh! Tastes like summer in a bowl. Of course this Corn, Tomato, and Avocado Salad is super popular but this version has that salty twist.
CAN I USE FROZEN CORN?
Fresh is definitely 100% better. Frozen corn can be used in a pinch.
GRILLED CORN
I love the flavor that grilling corn gives. Grilling for just a few minutes so the corn is still crisp but has a little smoky flavor.
ADDING SUGAR
If your corn and tomatoes are not in peak season you may want to add a pinch of sugar to bring out the sweetness so the salad doesn’t have bitterness.

Corn, Tomato, and Feta Salad
Ingredients
- 4 cups fresh corn kernels
- 2 cups halved grape tomatoes
- 1/3 cup sliced green onions
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 1/2 cup crumbled feta cheese (add more to taste)
- salt and pepper
Instructions
- In a medium bowl, stir together all of the ingredients except the feta. Gently stir in the feta and add salt and pepper to taste. Serve.
