BAKED OATMEAL
I went through a phase a couple of years ago where I tested out all kinds of baked oatmeals. Sweet, not so sweet, mini baked oatmeals, oatmeals with fruit, oatmeals, with craisins, with chocolate chips, with steel cut oats…you get the picture.
I finally found the perfect oatmeal. Not too sweet, holds together but not too hard, and easily adaptable. I went on a retreat with some women and this was a family recipe of one of the women.
INGREDIENTS IN BAKED OATMEAL
- Oats – old fashioned rolled oats are used in this recipe.
- Eggs – bind the oatmeal together and give added protein.
- Oil – keeps the oatmeal moist.
- Buttermilk – gives it the oatmeal a tangy taste.
- Sugar – just a little sugar to sweeten it up.
- Fruit – you can use fresh or frozen fruit
- Baking Powder – makes the oatmeal rise
- Salt – brings out the flavors.
VARIATIONS OF FRUIT
You can use any fruit you like. Here are some fruits that are great in this.
- Strawberries
- Raspberries
- Blueberries
- Apples
- Blackberries
- Peaches
CAN I USE FROZEN FRUIT
You can absolutely use frozen fruit. Frozen fruit tends to bleed its color when it comes in contact with liquid so if using frozen fruit place it on the bottom of the pan and pour the oatmeal mixture over it.
BUTTERMILK SUBSTITUTE
To make homemade buttermilk you add 1 tablespoon of lemon juice or white vinegar to every cup of milk. Let mixture sit for 5 minutes or until milk appears slightly curdled. For this recipe you’ll need 4 cups of milk and 4 Tablespoons of lemon juice or white vinegar.

Instructions
- Preheat oven to 350 degrees and grease a 9x13 baking dish.
- In a large bowl, add the buttermilk, sugar, eggs, and oil. Whisk to combine.
- Add the oats, baking powder and salt. Mix well.
- Add the apples and blueberries (or whatever fruit you desire) and stir gently. Pour into prepared pan. Note: If you are using frozen fruit place it on the bottom of the baking dish and pour the oat mixture over it so that the color doesn't bleed into the mixture.
- Bake for 45-50 minutes or until oatmeal is firm in the middle. Serve with whipped cream or yogurt.

How can I reduce the recipe for a 8×8 or 9×9 baking dish?
Yes just cut everything in half – either pan will work

Oh my goodness. Where has this recipe been all my life? I followed the instructions to the letter and used cleaned and quartered strawberries for the fruit. I thought about adding pecans or walnuts next time, but that’s for later. Right now I’m trying to be an adult about this and refrain from eating the whole thing in one sitting!

Yumalicious!!! This is one of the best breakfast casseroles EVER! I made exactly like the original recipe. Next time I will decrease the sugar a bit.
I’ve made baked oatmeal before. But, nothing would compare to this one!! I used the milk with lemon juice, added extra apple and cinnamon. Omg we will definitely hang onto this recipe! Next time with walnuts and ice cream 🍨

Can leftovers be stored in the fridge for a couple days?
I have a quick question. We just made this this morning and the top is delicious, but there’s a layer of white on the bottom. I stirred it really well, But it seems like something settled to the bottom. Would that be the buttermilk curdling a little bit or the egg? Did this happen for anyone else? Any suggestions on how I can fix that?
That will happen if sometimes if you use frozen fruit and don’t stir it in. Did you use frozen fruit?
That happened to me today too. I’ve made it before and never had it happen. Not sure what the difference is. I used fresh fruit, not frozen.

Is 4 cups of buttermilk the right amount of liquid for this recipe. It seems a lot.
It does seem like a lot but it is the right amount.
