No-Fry Fried Ice Cream

Happy Cinco de Mayo! Growing up in Arizona I ate a lot of Mexican food and still could eat it everyday if I had the chance (and the metabolism). I remember as a child being astounded at the whole concept of fried ice cream. There was always a hopeful look to my parents after dinner at our favorite Mexican restaurant. Please? Can we get it?This No-Fry Ice Cream is a quick and easy Mexican-inspired dish that has all of the crunch of actual fried ice cream but without all of the calories and mess of spattering oil.

Top it off with some caramel or chocolate syrup, whipped cream, and a sprinkle of cinnamon.

  4. This looks so good! I love fried ice cream! My version of it has the Fiber One cereal with cinnamon sugar. Tastes like the real deal, and it has the crunch. Plus the fiber!

  12. I combine the cereals and sugar with your hands, breaking up the cereal into small crumbs. Place the scoops of ice cream into the crumb mixture and coat thoroughly, squeezing the crumbs down into the surface of the ice cream firmly. Place on dessert plate, garnish with caramel sauce and berries, and serve.

  17. This is a great idea… no mess and definitely less fat without the need for oil! It’s weird, and I don’t know if this is an Australian thing only, but I’m used to fried ice cream being sold at Chinese restaurants rather than Mexican. I just googled some images of ‘Mexican fried ice cream’ and it looks exactly the same as the ones I’ve been eating at my local Chinese since I was a little girl! Now I’m curious as to who had the idea first! :)
