EASY BAKED CHICKEN PARMESAN

Back in college my sister-in-law Kim made this Chicken Parmesan recipe for me and it has been a staple in my house ever since.
I was amazed at how simple it was and I was just learning to cook.
I may have altered it a little over the years without knowing but the basic idea is the same.
Last Sunday we were challenged to not go to the store for a week. The idea was to see how prepared you actually were without notice to survive on what is in your house right now in case of a real emergency where you couldn’t run to the store.
Granted I’m a food blogger so the amount of food in my fridge and pantry is no doubt more than the average person. You never know when you will have cookie emergency.
It’s now Thursday night and we have still made it without going to the store. This is what I made last night. It is so easy and most likely you have everything needed in your pantry.
Sometimes I use Panko breadcrumbs for an even crunchier coating!

Easy Baked Chicken Parmesan
This Easy Baked Chicken Parmesan is my go-to easy dinner when I don't have anything planned because I always have all the ingredients on hand. Make it a complete Italian meal served over spaghetti with a green salad.
Ingredients
- 4 chicken breasts I like to butterfly them or pound them with a meat mallet so they are thinner.
- 1/4 cup butter melted
- 1 cup Parmesan cheese
- 1 cup Italian breadcrumbs
- 1/2 teaspoon garlic powder
- jar of marinara sauce
- mozzarella cheese
Instructions

Preheat oven to 350 degrees. Line a baking dish with foil and spray with cooking spray.

Mix the Parmesan cheese, bread crumbs, and garlic powder in a shallow dish. It really doesn’t matter how much Parmesan cheese and bread crumbs you have just make sure it’s equal parts. Melt butter in a shallow bowl. Dip the chicken in the melted butter, then the bread crumb mixture then place on the baking sheet. Bake for 30 minutes or until chicken is no longer pink. Spoon some spaghetti sauce over the middle of the chicken and sprinkle mozzarella cheese on top for the last 5-10 minutes of baking. Serve over cooked spaghetti with more marinara sauce.

I made this for my husband about 6 months ago and even to this day when I ask what he wants for dinner the answer is this chicken. Everyday! No we don’t eat it everyday but I’m sure he would if he could! Wonderful recipe!!! 🙂

I live alone most of the time, so I don’t have many chances to cook for anyone else, but when I visited my mother, sister in law, and nieces yesterday, I had to have a go. I served it with spaghetti and steamed broccoli, and even the finicky toddler ate all her chicken. It was a hit!
I made this chicken parmesan for my husband and I and we both absolutely loved it. I came back to find the recipe and make it again and it’s gone. Do you know where the chicken parm recipe disappeared to? I will be sure to write it down next time I get my hands on it. So quick, easy, and delicious! It’s a keeper.
