There’s something about homemade egg salad that is nostalgic. It reminds me of being home in my kitchen eating a good old fashioned lunch. Some people like some crazy variations on this but I like it classic.

This is made from basic ingredients. 

  • HARD BOILED EGGS – I have a whole tutorial on how to make perfect hard-boiled eggs. I like to use chopped eggs but if you like it creamier you can mash some of them.
  • MAYONNAISE – You could use Miracle Whip as well if that’s your preference.
  • LEMON JUICE – This just adds a brightness in flavor.
  • YELLOW MUSTARD – This adds a little tang. If you like a milder flavor you can use Dijon mustard.
  • GREEN ONIONS – This adds flavor and a little crunch. You could also use red onion.
  • OPTIONAL – Add plenty of fresh herbs but fresh dill would be my first choice.

Ingredients
  

  • 8 hard boiled eggs, peeled and coarsely chopped
  • 6 tablespoons mayonnaise
  • 1/4 cup sliced green onions
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon yellow mustard
  • salt and pepper to taste
  • (optional) 1/2 cup celery, chopped, (see note)
  • (optional) paprika for serving
  • For serving: bread or crackers

Instructions
