BUCKEYE RECIPE
It’s no secret that I love peanut butter and chocolate. These rich treats satisfy any sweet tooth.
I have had these before and my version has a little more of peanut butter flavor than some because I don’t think they should taste like straight powdered sugar.
THE NAME
Buckeye candy gets its name because it looks like the poisonous nut of the Ohio buckeye tree which is why this dessert is popular in Ohio.
HOW TO MAKE:
- In a large bowl, add the powdered sugar, peanut butter, butter, and vanilla. Mix slowly at first with a mixer, increase the speed, and mix until well combined.

- Roll dough into balls, around 2 teaspoons, and place on a parchment lined baking sheet.
- Freeze balls for at least 30 minutes to firm up.

- When ready to dip, melt chocolate chips and coconut oil in a microwave safe bowl in 30 seconds intervals, stirring in between until smooth.
- Insert a toothpick into each ball, and dip in the chocolate without completely covering the top so that it looks like a buckeye. Place on the parchment to set. Remove the toothpick.
- Chill in the fridge for about 30 minutes to set. Store in the fridge until serving.

Ingredients
- 3 cups powdered sugar
- 2 cups creamy peanut butter , (not natural)
- 1/2 cup salted butter, softened, (see note)
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons coconut oil, (shortening can be substituted)
Tools: toothpicks, parchment paper
