Breakfast Burritos
These Sausage and Egg Breakfast Burritos are made from only 4 ingredients: eggs, sausage, cheese, and tortillas. I like to make these in bulk ahead of time so my kids can just grab one for breakfast, heat it up and go.

BREAKFAST BURRITOS
For year my children weren’t morning people and did NOT want to eat breakfast. But times have changed, and now I have a few that not only like breakfast but breakfast burritos.
These are very simple burritos. You can make them in minutes or ahead of time. If you want a spicy, saucy version with potatoes you should try this Denney family favorite Green Chile Burritos.
INGREDIENTS:
- TORTILLAS – I like to use uncooked raw tortillas. My favorite are the brand Tortilla Land but you can use any kind. My girls like just a little something in the morning so I make theirs with the soft taco size but for a a more substantial burrito use the burrito size.
- EGGS
- BREAKFAST SAUSAGE – You can use a whole pound if you like yours bulkier.
- CHEESE – I like a cheddar cheese or Mexican blend cheese.
HOW TO MAKE:

In a medium skillet, brown the sausage until no longer pink. Set aside.

- In a separate non-stick skillet, cook the eggs over low-heat, adding salt and pepper to taste.

For each tortilla, add some eggs, sausage, and about 2-3 tablespoons of cheese on the bottom 1/3 of the tortilla. Fold the sides inward, and roll up from bottom to top, placing seam side down. Repeat with all of the tortillas.

MAKE AHEAD
If making ahead of time it helps if the ingredients are not hot so that the tortilla doesn’t get soggy. Once burritos have cooled, wrap in plastic wrap or foil (depending on how you want to heat them up) and store in the fridge or freezer.
If reheating in the oven, wrap them in foil. Bake at 350℉ for about 30-35 minutes. If reheating in the microwave, heat for 2-3 minutes or until heated through.

My kids eat on the way to school so I give them a small disposable container of salsa.

- 12 large eggs
- 1 1/2 cups shredded cheddar cheese or Mexican blend cheese
- 6 large tortillas or 10 medium tortillas, (I like to buy uncooked tortillas and cook them)
