These Sausage and Egg Breakfast Burritos are made from only 4 ingredients: eggs, sausage, cheese, and tortillas. I like to make these in bulk ahead of time so my kids can just grab one for breakfast, heat it up and go.
6large tortillas or 10 medium tortillas, (I like to buy uncooked tortillas and cook them)
Instructions
In a medium skillet, brown the sausage until no longer pink. Set aside.
In a separate non-stick skillet, cook the eggs over low-heat, adding salt and pepper to taste.
For each tortilla, add some eggs, sausage, and about 2-3 tablespoons of cheese on the bottom 1/3 of the tortilla. Fold the sides inward, and roll up from bottom to top, placing seam side down. Repeat with all of the tortillas.
Make ahead: If making ahead of time it helps if the ingredients are not hot so that the tortilla doesn't get soggy. Once burritos have cooled, wrap in plastic wrap or foil (depending on how you want to heat them up) and store in the fridge or freezer. If reheating in the oven, wrap them in foil. Bake at 350℉ for about 30-35 minutes. If reheating in the microwave, heat for 2-3 minutes or until heated through.
