OATMEAL PEANUT BUTTER BARS

We are on peanut butter overload over here. We go through about a jar of peanut butter every two weeks. Is that too much?

One of my favorite treats at Christmas time are these Peanut Butter Cup Cookies. These are kind of like the bar version of those with a layer of peanut butter frosting.

These bars are chewy and hearty – full of peanut butter and oats. The top is frosted with a thin layer of peanut butter frosting. If you want more…go for it.

HOW TO MAKE THESE

  1. Preheat oven to 350 degrees F and spray a 9×13 baking dish lightly with cooking spray.
  2. In a large bowl cream the butter, peanut butter and sugars. Add the egg and mix well.peanut butter oatmeal batter
  3. Add the flour, baking soda, salt and oatmeal and mix until well combined. Mixture will be wet. Press into prepared pan.peanut butter oatmeal bars

These delicious peanut butter oatmeal bars bake up quickly, and then you top them with a quick peanut butter icing.

  • FOR THE FROSTING: Combine the butter, peanut butter, and vanilla in a medium sized bowl and beat until fluffy. Add the powdered sugar and add the milk gradually until you reach the desired consistency. You may not need it all. Frost cooled bars.
