I’m always looking for high protein recipes that my kids will eat and these are them! One of my favorite baked eggs recipe has cottage cheese in it and it is the secret to the creamy texture and fluffy eggs.

Cottage Cheese Egg Bites

Instructions
- Preheat oven to 350℉ and spray a muffin tin well or use a silicon pan. This is the hardest part of the recipe. Eggs like to stick so grease it well or best case scenario use a silicone pan.
- In a blender, add the eggs, cottage cheese, salt and pepper. Blend egg mixture until smooth.
- Fill between 9-12 muffin cups with the blended mixture. Every pan is slightly different in size so you'll want to fill them almost to the top about 3/4 full. Sprinkle 1/2 cup of the shredded cheese on top of each egg cup. It will sink slightly. Add any other toppings you desire.
- Bake for 18 minutes. Pull from the oven and sprinkle the remaining 1/2 cup of cheddar cheese evenly on top. Bake for an additional 4-6 minutes or until cheese is melted and eggs are set. *Note - I have noticed that a metal pan cooks faster whereas a silicon pan cooks slower so you may need to cook on the longer side. Remove from the oven and cool slightly. Loosen edges with a knife if needed and eat.





Wow! These are delicious and easy to make. Great way to add any vegetables you need to use up. I did sauté the vegetables for a few minutes before adding them to the silicone baking cups.
