3cups assorted sliced fruit like strawberries, blueberries, kiwi, pineapple, or whatever fruit you like
Instructions
Preheat the oven to 350 degrees and line a 10x15 baking dish with parchment paper. See notes for other pan sizes.
For the crust: In a large bowl beat the butter and sugar until light and fluffy.
Add the egg, vanilla, almond extract and mix until combined.
Add the flour, baking powder, and salt and mix until combined.
Press dough into the baking dish and bake for 12-15 minutes or until edges begin to have a touch of golden brown. Do not overbake! Remove from oven and let the bars cool in the pan. Cool completely.
For the frosting: Beat the cream cheese and butter until fluffy. Add the powdered sugar, and vanilla and beat until creamy. Add a tablespoon of lemon juice if desired. Beat until fluffy. Frost cooled bars. Let chill in the fridge and topped with desired fruit. Store in the fridge until serving. Cut into squares to serve. Best served the same day.
Notes
OTHER PAN SIZES:
9×13 baking dish for a thicker bar – Bake for 18-20 minutes.
Pizza Pan – Bake for 15-18 minutes.
MAKE AHEADMake the crust and frosting and chill for up to three days. Fruit should be added on the day of serving.
