Ingredients

watermelon, diced finely

red bell pepper, seeded and finely diced

(about 3/4 cup)

chopped cilantro

red onion, finely diced

jalapeno
seeded and diced finely

lime, juiced

(about 1-2 tablespoons)

kosher salt
Instructions
Add all ingredients into a bowl and toss together. Chill until serving. Serve with tortilla chips or over fish.
Notes
You can use any color bell pepper.
