This Butterscotch Apple Pecan Cobbler is divine! It's a nice twist on your classic apple cobbler and the butterscotch chips mixed in with the apples melt and give it such a delicious and unique taste.
2 1/2lbstart apples, peeled and diced (about 5 large apples)
Topping:
1/2cupcup all-purpose flour
1/4cupcup brown sugar, firmly packed
4tablespoonsbutter, (1/2 stick)
1cuppecans, chopped (you can also use walnuts or sliced almonds)
3/4cupquick oats or old fashioned oats, uncooked
Instructions
Preheat the oven to 375 degrees.
In a small bowl, combine butterscotch morsels, brown sugar, flour and cinnamon; set aside.
Place apples in a 13x9 inch baking pan-sprinkle butterscotch morsel mixture over the apples.
Bake for 20 minutes. This is too give the apples a head start on baking.
For the topping: Combine the flour and brown sugar; cut in butter with food processor, pastry blender or two knives till mixture is crumbly.
Stir in pecans and oats and sprinkle over apple mixture.
Bake 25-35 minutes or until apples are tender. Check halfway through to make sure the top doesn't get to brown. Cover with a foil tent after checking if you're worried about it browning too much.Serve warm with vanilla ice cream or whipped cream.
