Because I am a food blogger, my family is subjected to an array of new recipes every single week. We always have Taco Tuesday and pasta at least one night. But then there are nights where we are crazy busy with practices for my kid’s sports and dinner is the last thing I want to worry about. I’m a stickler about always having veggies in our meals. It makes me feel better because I know my kids are getting at least something nutritious throughout the day.

These Tuscan Chicken and Broccoli Hand Pies sound fancy but they are super easy with only 5 ingredients. Of course we all would love to eat a whole pie by ourselves but making them individually portioned like this is a lot less messy and tells our brain when to stop eating (a problem I have).

I honestly have been using them for years. It’s seasoned broccoli that you can steam in minutes in the microwave which I love because I hate using and washing my steamer. Broccoli is the one vegetable that ALL of my family loves.
Tuscan Hand Pies1It’s as easy as quartering your pie crust and placing the filling on one side and topping it with the other crust. You can crimp the crust like I did or just use a fork and go around the edges.

Tuscan Chicken and Broccoli Hand Pies


  • 1 box Pillsbury refrigerated pie crust (2 crusts)
  • 1 bag (11.8 oz Green Giant Seasoned Steamers frozen Tuscan seasoned broccoli)
  • 1 package (8 oz cream cheese, room temperature)
  • 1/3 cup sundried tomatoes , packed in oil and drained
  • 1 1/2 cups cooked and shredded chicken


  1. Preheat the oven to 400 °. Soften pie crust according to package directions.
  2. Cook broccoli as directed on the bag.
  3. In a medium bowl, add the cream cheese, sundried tomatoes, chicken, and cooked broccoli. Mix well.
  4. Cut each pie crust into 4 equal wedges. Spoon about 1/2 cup of the chicken mixture onto one of the wedges of pie dough and top with another wedge on top. Press the edges together and crimp the edges up. Cut a couple 1-inch slices in the top to help vent the steam. Repeat with the remaining pie dough making 8 pies total.
  5. Place the hand pies on a baking sheet and bake for 15-20 minutes or until they are golden brown.

Recipe Notes

You can even make mini versions of these. Cut each pie crust into 8 wedges instead of 4. Your kids will love their individual mini pies.

I love using rotisserie chicken in these and it makes preparation even easier.
