Ingredients

  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breasts
  • 1/2 cup BBQ sauce, (use sugar-free BBQ sauce if making Keto)
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 4 pieces of bacon, cooked and crumbled
  • 1/2 cup diced tomatoes
  • 2 tablespoons sliced green onions

Instructions
 

  • Preheat oven to 400℉. Preheat a large oven safe skillet to medium-high heat and add the olive oil. While skillet is preheating, pound chicken breasts to flatten them if they are thick. Salt and pepper the chicken breasts.
  • Add chicken to pan and cook 4-5 minutes per side or until no longer pink.
  • Turn off the heat and pour BBQ sauce on each chicken breast evenly.
  • Sprinkle the cheese evenly on the chicken breasts and top with the crumbled bacon.
  • Bake the chicken for 2-3 minutes until cheese is melted.
  • Top with bacon, diced tomatoes, and sliced green onions. Serve.
