FRITO CORN SALAD
We recently went to meet the teacher at elementary school and were surprised to find out that my son Weston was placed in a gifted class. And by surprised I mean shocked.
Not that he isn’t smart, because he definitely is, but he spends most of his time in lala land daydreaming about things.
Sometimes when he does something extra spacey, my husband will nudge me and whisper, “Gifted, huh?” In his gifted class they have twice the homework as other first graders which in my opinion is absurd for their young age.
At the open house for the parents it was like being in a room full of peacocks. Parents raising their hands asking questions that also provided an opportunity for them to show how great their child was.
For example, one parent raised her hand and said, “Since my daughter gets done with her homework so quickly can she do extra book reports on her own and bring them in to you?”
Insert eye roll. Sorry for my cynicism, but they’re KIDS people. Let them be kids! I had to keep my head down as each parent raised their hand because my face is so transparent.
I made this Frito Corn Salad years ago but couldn’t bring myself to post it because I felt like I would get hate mail.
I get angry emails for using a can of condensed soup so making a “salad” out of Fritos – yeah, I didn’t think that would go over to well.
But guess what? It’s good and if you’re not a fan, I’ll have a healthy recipe for you tomorrow. Or you can try this Corn, Tomato, and Avocado Salad.
Oh wait. Maybe next week? Umm…nevermind. Maybe this isn’t the site for you. Now that we’ve cleared the air, let’s get to the Frito Corn Salad.
This salad is pretty simple: corn, peppers, onion, and mayo. I used canned corn here but you could definitely used frozen corn thawed or fresh. If you want to add some color use red and green pepper.
It’s very important to not add the crushed Fritos until right before serving because you want them nice and crunchy. Eat this with a spoon or use it as a dip!

Ingredients
- 2 (15 ounce) cans whole kernel corn, drained
- 2 cups grated cheddar cheese
- 1 cup mayonnaise

- 1/2 cup red onion, diced finely
- 1 (10 1/2 ounce) bag coarsely crushed regular Fritos corn chips or Fritos chili cheese corn chips
- Fritos Scoops for serving

Mix first 5 ingredients and chill. Stir in corn chips just before serving. You may not want to add all of the corn chips. Add a little at a time. Some people prefer to just serve the Fritos on the side or crumbled on top. You can eat this with a spoon or as a dip with Fritos Scoops for serving.
Recipe Notes
Use both red and green peppers for more color.
You don't have to add all of the crushed Fritos. Just add until desired consistency.

Thank you for sharing the recipe. We love it. It’s something different to take to potluck dinners. Most people bring potato salad etc. I always get compliments & request for recipe.
Love that!
I had this at a family reunion and thought it was WONDERFUL! I know it’s a can of corn, but it felt fresh and so crunchy!! I loved it and it’s a great quick dish to bring to any event!!
Thanks!
Just found this recipe! I’ve had at it at potlucks and am making it for the first time today. Any thoughts on adding chili seasoning to it? Maybe 2 tsps.
I think chili seasoning would be great or adding chili cheese fritos!
I’m very happy to discover this great site. I need to to thank you for ones

What’s a serving size! I’m adding this recipe to my WW app!
Shoot. Well there are 8 servings so I just divide it by 8.
Would plain Greek yogurt work instead of mayo?
YEs. It’s definitely very tart with that substitution though.
Hi this salad, dip is to die for! Can you make it a day ahead? And add the Fritos right before serving?
Yes, totally!
I made this for my sister’s birthday party, but I grilled whole ears of corn and scraped it off the cob for another layer of flavor. I also made a separate batch with chopped jalapeno peppers for a more spicy version for my bro in law who is Mexican. It was a huge hit!
I bet the grilled version was fantastic!
