Cranberry, Orange, and Pecan Roll-ups

Sometimes my husband comes home from Costco with enough Listerine to give us fresh breath until 2013 and sometimes he comes home with a blender that can chop up a golf ball. He might have to hide the blender when golf season comes around…

You never know what he’s going to come with. The other day he came home with a huge bag of dried cranberries. Cranberry, Orange, and Pecan Roll ups - the-girl-who-ate-everything.comWhich is why I’m sharing these Cranberry and Orange Pecan Roll ups. Yum!!

  • 2 8 ounce cans refrigerated crescent roll dough
  • 8 ounces cream cheese , softened
  • 4 tablespoons sugar
  • 1/4 cup dried cranberries , chopped
  • 1/3 cup pecans , chopped
  • 3/4 teaspoon cinnamon
  • Zest of one orange
  • 1 Tablespoon butter , melted
  • 3/4 cup powdered sugar
  • 3 tablespoons orange juice
  1. Preheat oven to 350°F.
  2. Combine cream cheese, sugar, cranberries, pecans, cinnamon, and orange zest in a small bowl and mix well.
  3. Unroll crescent roll dough into 16 triangles.
  4. Spread 1 tablespoon of filling onto each crescent roll.
  5. Starting with the wide end first, roll up the crescent roll making sure to seal the sides so the filling doesn't leak out.
  6. Place on a cookie sheet point side down and bake for 8-10 minutes or until golden brown.
  7. Combine butter, powdered sugar, and orange juice in a small bowl while rolls are baking. Brush mixture over rolls right when they come out of the oven.

  4. Also, here is a delicious recipe to some Pork Chops that include Cranberries! I mean it, they’re juicy and delicious. Hope you try them out, it’s one of my favorites.

    Pork Chops with Apples and Cranberries

    • 4 to 6 boneless pork chops, about 3/4-inch thickness
    • Salt and pepper
    • 1/4 cup flour
    • 2 tablespoons butter
    • 1 tablespoon vegetable oil
    • 1 large onion, halved, sliced
    • 2 cups coarsely chopped apple
    • 1 tablespoon lemon juice
    • 1/2 cup apple cider or apple juice
    • 3 tablespoons brown sugar
    • 1/4 teaspoon cinnamon
    • Dash ground allspice
    • 1/3 cup dried cranberries

    In a large skillet, heat butter over medium heat. Add onions and sauté for 4 to 6 minutes, until lightly browned.

    Remove onions to a plate and set aside. Add olive oil to the skillet.

    Sprinkle pork chops with salt and pepper then dredge in flour. Brown the pork chops for about 2 minutes on each side.

    Meanwhile, combine chopped apples with lemon juice, apple cider, brown sugar, and spices.

    Pour the apple mixture over the pork chops, add the onions back to the skillet, and bring to a simmer.

    Reduce heat to medium-low and simmer, uncovered, for 5 minutes.

    Cover and simmer for 20 minutes. Stir in cranberries and continue cooking for 2 minutes longer.
    Serves 4 to 6.

  6. Unless I am crazy, I don’t see in the instructions where you use the melted butter, powdered sugar and orange juice???? My guess is that you made a glaze. Did you put this on right after baking??
