Buffalo Chicken Nachos
Buffalo Chicken Nachos a spicy chicken appetizer drizzled with buffalo sauce, celery, cheddar cheese, blue cheese, and blue cheese crumbles. These are a great appetizer for game day!

Redemption. I made a horrible dinner the other night. I mean I would rather eat a shoe horrible. Usually I’m the last person to sit down at the table…grabbing condiments, cutting up food for the little minions, or taking garlic bread out of the oven. So when I sat down and actually took a bite of the dinner that I had not yet even taste tested, I was a little shocked at how blah it was.
I said to John with a plastered smile on my face and sugary inflexion to disguise my disgust, “This dinner is T-E-R-R-I-B-L-E.”
John said stalling, “Umm…”
And this is where being known as a man of few words has its benefits. And John, being the smart husband he is, learned ages ago that less is more when expressing your feelings about a not so good meal.
So we that we all sat there and choked down the second worst meal I have ever made. We had already threatened the kids that if they didn’t eat we would take away their Wii and hot tub privileges. So what consequences did I get if I didn’t eat? No more chocolate? No more Diet Dr. Pepper?
These Buffalo Chicken Nachos were all about proving that I still had it in me to make a meal that made my man happy. We had both been lusting after these nachos ever since we spotted them in a copy of Food Network magazine I bought for our flight to Hawaii. I was planning on waiting until March Madness to try these out but today is National Tortilla Chip Day so it seemed fitting.

Buffalo Chicken Nachos
Ingredients
- 8 cups tortilla chips
- 4 cups cooked chicken, shredded
- 1 1/2 cups Frank's Buffalo Wing sauce
- 1/2 cup water
- 3 cups shredded cheddar cheese
- 1/3 cup blue cheese dressing
- 4 ounces blue cheese crumbles
- 1 cup chopped celery
Instructions
- Preheat oven to 475 degrees. Spread tortilla chips on a rimmed baking sheet or in a shallow dish.
- Bring wing sauce and 1/2 cup water to a simmer. Add shredded cooked chicken; heat through. Strain the chicken (reserving the sauce) and spread over ranch-flavored tortilla chips. Top with shredded cheddar.
- Bake in the upper third portion of the oven until cheese is melted for about 5-7 minutes. After nachos are baked top with blue cheese dressing, blue cheese crumbles, chopped celery and the reserved wing sauce.
I made these a few weeks ago for a dear friend (who managed a Mexican restaurant for years). He is STILL talking about how delicious they were! Will definitely be making them again!!! We used regular tortilla chips instead of the ranch (was worried about salt overload), used sour cream as well. I’ll probably include some typical nacho toppings next time, but these were absolutely amazing!!!!

Yum!! Instead of wing sauce, I mixed equal parts Frank’s hot sauce with Cattleman’s Tangy Carolina Gold BBQ Sauce and it was to die for! It cut the saltiness and added a yummy, tangy sweet flavor. I, like many above, could eat buffalo chicken on ANYTHING.
I made these twice within the past week! everybody raved about them and they were WONDERFUL! however, the first time i made them I only put the chicken, cheese, basically everything on the top layer of the chips! this made the bottom chips dry & with nothing on them – the second time i made them i layered the cheese, chicken, etc with multiple layers and they turned out MUCH better! just a suggestion 🙂

Yum, can’t wait to try these!! Have to admit I barely made it down to the recipe though, the story of your meal failure about made me wet my pants. I SO feel ya, I would of taken myself out for ice cream afterwards. 🙂

Just got finished eating these for dinner and they’re yummy! The only thing I think I’ll change next time is to use regular tortilla chips instead of the ranch flavored variety. I think they were a little salty with the ranch chips and you really didn’t need the extra flavor. Everything else was perfect though! Very tasty and easy to put together! Thanks for sharing the recipe!
Made these tonight for dinner (minus the celery, because I most awesomely forgot it at the store not once, but TWICE now) and I have to tell you, it was MOUTHGASM from beginning to end! My boyfriend kept laughing at me because whenever I came up for air I would groan and say, “Oh my gawddddd, these are the BEST NACHOS EVER!”
I wound up using Tostitos Hint of Pepperjack chips instead of Cool Ranch Doritos, and I layered the chips/chicken/cheese twice, and it was spectacular. I did everything but lick the dish.

How did you cook the chicken and what part of the chicken did you use?
I use chicken breasts and I usually throw them in a crockpot on low for 3 hours or boil them with some onion chunks for 15-20 minutes.

Recently, however, I made a cheesecake for my MIL birthday and it was a total ‘failure’.
