PORK CHOPS

Today is my youngest daughter Bailey’s 3rd birthday. I guess it’s weird because that means I’m officially out of the baby stage.

Trust me, there are definite perks to not being there anymore but on the flipside I’m sad that there won’t be anymore first steps, first words, or for lack of anything else – ancedotes of funny little things babies do to share with you here.

Part of me is scared that this automatically advances me into an entirely different friends bracket. I used to be in the middle. Kids old enough to hang with the mid forties crowd but kids young enough to hang out with the twenties crowd and their young kids.

Today, as I was running, the song “Yellow” by Coldplay came on. My daughter was literally born to this song.

The doctor could tell that I was really anxious, on the verge of an anxiety attack, so before he performed my C-section he asked what was my favorite station on Pandora was. I muttered “Coldplay, but I don’t really care.”

Which is sad because it shows that even when I’m under the knife, I still feel guilty for getting what I want.

The doctor had no idea how much music soothes my soul and no idea how much I needed it to relax at that moment. Even now, I’m so grateful that he felt like he should do that. So the very first words Bailey ever heard was, “Look at the stars, look how they shine for you”…blaring in her ears.

I remember imagining Scientologists cringing all over the world. They’re known for having silent births and the thought of a baby coming into the world with that racket could only be horrifying to them.

But it wasn’t to me. It was beautiful. A beautiful 9lb 4ounce baby girl – the caboose to our little family was finally here.

You’ll notice that I don’t have any pork chops on this blog. I’ve always thought they were too dry and too chewy. Turns out I was just overcooking them. We’re so afraid to undercook pork that we tend to cook them until they’re jerky. You guys, this horseradish crust…I want to put it on everything. Chicken, steak, fish…you really could put it on any of those and it would be phenomenal. I love horseradish. I love the bite of it. I was scared that my kids would run for the hills.

My 11-year-old all the way down to my 2 year-old (now 3-year-old) ate this without even a peep about it being spicy. When it cooks the horseradish mellows out.

You want the prepared horseradish not to be confused with creamy horseradish. I love that stuff too but it’s definitely not as potent.

These Horseradish Crusted Pork Chops are pork chops topped with a tangy, buttery, breadcrumb topping that melts in your mouth.
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 4 servings

Ingredients

  • 4 boneless pork chops
  • 1/4 cup melted butter
  • 1/4 cup dry bread crumbs
  • 1/4 cup prepared horseradish, (not creamy)

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
  • Place the pork chops into the prepared baking dish. Mix together the butter, bread crumbs, and horseradish. Spoon the mixture onto the pork chops, and press down the mixture to completely coat each chop with about 1/4 of the mixture.
  • Bake in the preheated oven until the chops are tender, about 30 to 40 minutes depending on the thickness of your pork chops. Place the pork on the top rack for the last couple of minutes to get the crust nice and golden.
