This is the first time that I might be more into the game than the food. I know, weird right? But you see my husband is from Colorado and a die hard Broncos fan so we obviously have to cheer for them. And then the other part of me wants to see Peyton Manning win because he’s old. I’m joking. I’ve never heard so much about a quarterback’s age in the media and just want to people to stop talking about how old he is. He’s 39 for crying out loud. My husband is only a couple years behind Peyton and I like to think of them as “seasoned” not old.

I’m sure you’ve all had a version of these balls and some time in your life. I’ve had them with crunchy cereal and with just peanut butter but this version is the EXTREME version!

It doesn't get any better than this. Imagine crushed up Lays and Fritos mixed with peanut butter and dipped in chocolate. These Loaded Peanut Butter Chips Balls are a sweet and salty combo that's is tasty as it sounds.

Servings: 6 dozen

Ingredients

  • 1 ½ cups crushed Fritos, (about 3 cups uncrushed)
  • 1 ½ cups crushed Lays potato chips, (about 4 cups uncrushed)
  • 2 cups creamy peanut butter, (you can use crunchy if you like)
  • ½ cup butter, softened
  • 3 ¾ cups confectioners’ sugar
  • 1 pound melting chocolate, (I like to use Baker's)

Instructions
 

  • Using a food processor, crush the Fritos until fine to yield 1 ½ cups and set aside. Crush the Lays Potato chips until fine (1 1/2 cups crushed) and set aside.
  • In a food processor or stand mixer, cream together peanut butter and butter until smooth. Add the confectioners’ sugar and mix until combine. Pour the crushed Fritos and Lays potato chips into the mixture and mix until combined.
  • Chill mixture for 30-60 minutes until firm enough to roll into balls. Roll mixture into 1-inch balls and refrigerate balls until firm. For better results, balls can be frozen.
  • Heat melting chocolate according to package directions. Using a fork, dip balls in the chocolate shaking excess of and place on wax or parchment paper to set. Top with additional crushed chips for presentation if desired. You can speed up the process by chilling them in the fridge.
  • Note: You can also stick a toothpick in the top of the balls before freezing. This makes dipping easier.
