How was your Halloween? Our neighborhood is magical on Halloween. The streets are lined with kids and everyone’s out chatting enjoying the festivities. I let my kids invite their friends over for a little pre-trick-or-treating party.

I intended to make this Chicken Taco Soup that I make every year for Halloween but ending up making my Mom’s Chicken Chili soup from my cookbook instead.

Of course we had some Halloweenies, this Chili Dip, and a couple other scary treats.

I always give myself a free pass to eat whatever I want on Halloween. After my kid’s baseball games I even stopped by Burger King to let them try the Black Whopper. Dun, dun, duuuunnn! It’s scary. Have you seen it? The bun is black. BLACK.

We actually didn’t get to try it because they stopped selling it a while ago – probably a huge blessing in disguise.

I ate so much candy. At the end of the night I never wanted to eat again…until today around 5 pm when I scurried around nabbing Reese’s from my kid’s stash.

Is is too soon to talk Thanksgiving? I made this Butterscotch Apple Pecan Cobbler and fell in love. Here’s the thing.

I’m pretty particular about my butterscotch chips. I will only use Nestle – the other brands taste weird to me. I must use those in my beloved Pumpkin Scotchies.

The apples in this are baked with cinnamon and butterscotch chips which melt and create this amazing sauce that people can’t quite figure out what it consists of.

Then a brown sugar, nut, oat crumble goes on top and is baked until toasty. I used mostly pecans and some almonds because I didn’t have enough. It’s so good. And even great cold for breakfast…ahem.

Ingredients

  • 1 (12 ounce) package Butterscotch Flavored Morsels (2 cups)
  • 1/4 cup cup brown sugar, firmly packed
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon teaspoon cinnamon
  • 2 1/2 lbs tart apples, peeled and diced (about 5 large apples)

Topping:

  • 1/2 cup cup all-purpose flour
  • 1/4 cup cup brown sugar, firmly packed
  • 4 tablespoons butter, (1/2 stick)
  • 1 cup pecans, chopped (you can also use walnuts or sliced almonds)
  • 3/4 cup quick oats or old fashioned oats, uncooked

Instructions
 

  • Preheat the oven to 375 degrees.
  • In a small bowl, combine butterscotch morsels, brown sugar, flour and cinnamon; set aside.
  • Place apples in a 13x9 inch baking pan-sprinkle butterscotch morsel mixture over the apples.
  • Bake for 20 minutes. This is too give the apples a head start on baking.
  • For the topping: Combine the flour and brown sugar; cut in butter with food processor, pastry blender or two knives till mixture is crumbly.
  • Stir in pecans and oats and sprinkle over apple mixture.
  • Bake 25-35 minutes or until apples are tender. Check halfway through to make sure the top doesn't get to brown. Cover with a foil tent after checking if you're worried about it browning too much.Serve warm with vanilla ice cream or whipped cream.
