QUESO FRESCO 

My sons have birthdays back-to-back in March and April so I pretty much feel like I’ve eaten cake every week for the last month. Not to mention my son was also baptized hence another party celebration and…you guessed it,…more cake.

For my son’s baptism I made this Feta Dip which I love because it tastes so fresh and is so easy – double bonus. I was wondering if I could come up with a Mexican version.

INGREDIENTS

  • Roma tomatoes – you could use cherry tomatoes as well.
  • Cilantro
  • Red onion
  • Olive oil
  • Queso Fresco Cheese – is a Mexican cheese and means “fresh cheese”, traditionally made from raw milk (cow’s milk) or a combination of cow and goat milk. This is a white cheese that is popular in Mexican cheeses with a tangy flavor and a mild milky note. It’s unaged like most acid-set cheeses compared to other cheeses that are aged cheeses. You can find it at most grocery stores. It’s a soft cheese pretty similar to feta cheese or goat cheese.
  • Lime juice – you can use lemon juice in a pinch.

I started with some diced Roma tomatoes, cilantro, and red onion with a drizzle of olive oil and some lime juice to brighten it up.

Next, I added some queso fresco which is a type of cheese that has the similar texture of feta but is a little less salty. If you can’t find queso fresco feta will work. I used some taco seasoning to add some flavor. Add more or less to your taste.

Then mix it all together and you’re done. Serve with tortilla chips or sliced flour tortillas.

Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 4 roma tomatoes, seeded and diced
  • 1/4 cup finely chopped cilantro
  • 1/4 cup finely chopped red onion
  • 8 ounces queso fresco, crumbled (feta can be used as a substitute)
  • 2 tablespoons Old El Paso™ taco seasoning mix, (from a 1 oz package)
  • Tortilla chips

Instructions
 

  • On a large platter, drizzle the oil olive and lime juice.
  • Sprinkle the tomatoes, cilantro, onion, and queso fresco on top. Add the taco seasoning and mix together with a spoon. Add salt and pepper to taste. Serve with tortilla chips or sliced flour tortillas.
