I just got cleared by my doctor to start working out again after my c-section. I’m a runner and couldn’t wait to hit the pavement. On my first run out I had all the motivation in the world but my legs felt like dead weight with absolutely no strength in them. The paradox is that running is what helps me lose weight but it’s really hard to run when I’m heavy.

So what I’m trying to say is that I’m trying to eat healthier. It’s so hard with all of the Halloween chocolate around. I definitely still love my sweets but for today I’m going to share a super easy and healthy side dish.

Broccoli is one of the few vegetables that my kids will eat happily. We usually just eat it plain but tossing it in a garlic hummus is a great way to switch things up.

Creamy Hummus Broccoli

You might not think so at first, but hummus makes a wonderfully creamy broccoli side dish without heavy cream and cheese.
Prep Time: 5 minutes
Cook Time: 6 minutes
Total Time: 11 minutes
Servings: 4 servings

Ingredients

  • 3 1/2 cups broccoli florets
  • 1/2 cup garlic hummus
  • salt and pepper to taste

Instructions
 

  • Steam broccoli for 5-6 minutes or until desired doneness.
  • Gently toss the broccoli and hummus together until well coated. When the broccoli is warm it soaks up the hummus.
  • Season with salt and pepper to taste
  • Serve warm or cold.
