ROAST BEEF HORSERADISH PINWHEELS

I’m always looking for an easy appetizer for parties that doesn’t have to be babysat. Doesn’t have to be chilled or needs to stay hot. These Roast Beef Horseradish Pinwheels are the perfect recipe!

We are currently in the middle of the ocean on a cruise somewhere in the Carribean! But I couldn’t let Monday come and go without sharing these Roast Beef Horseradish Pinwheels. I thought it was funny because I asked you guys on Instagram for tips for cruising with kids and so many of your best tips were to say, “Don’t go with kids!”

I’m hoping we can do a little of both, family time and couple time. We’ll see how it goes. Fingers crossed.

Roast Beef isn’t the first thing I jump to when I make any recipe. Were pretty much a chicken/beef/chicken/beef/fish kind of family. However, when it comes to game day food (my favorite food), all bets are off and anything goes.

Roast Beef Horseradish Pinwheels

Ingredients

  • 1 (8 ounce) package cream cheese, , softened
  • 2 tablespoons prepared horseradish
  • 1 1/2 tablespoons Dijon mustard
  • 6 (10 inch) flour tortillas
  • 2 cups spinach leaves, stems removed
  • 3/4 lb thinly sliced deli roast beef
  • 4 ounces (1 cup) shredded cheddar cheese

Instructions
 

  • In a bowl, mix together cream cheese, horseradish, and Dijon mustard.
  • Assemble pinwheels by spreading a thin layer of the cream cheese mixture over each tortilla. Then layer spinach, roast beef, and cheese.  Tightly roll up each tortilla and wrap it with the foil or plastic wrap. 
  • To serve, slice each roll into one-inch slices. 

Notes

You can store them up to two days.
