Bacon Cheeseburger Mini Boats
Servings: 12 mini tacos
Ingredients
  • 4 strips of bacon
  • 3/4 lb ground beef
  • 1/2 small onion , diced
  • 2 teaspoons Worchestershire
  • 1 tablespoon ketchup
  • 1 tablespoon mayonnaise
  • 12 Old el Paso Taco Boats mini soft flour tortillas
  • 3/4 cup shredded cheddar cheese
  • Toppings: lettuce , tomato, mustard, ketchup
Instructions
  1. Preheat oven to 350 degrees. Cook bacon in a skillet until done and drain on a paper towel.
  2. In a skillet, brown the beef and onion until done. Drain. Add salt and pepper to taste. Remove from heat. Stir in the Worchestershire, ketchup, and mayonnaise.
  3. Place the mini soft flour tortillas on a baking sheet. Divide meat mixture evenly into the boats and sprinkle with the cheese.
  4. Bake for just a couple minutes or until cheese melts.
  5. Remove from oven and top with crumbled bacon, lettuce, tomato, and mustard (or whatever toppings you like).

  2. I started buying these taco boats since seeing them on your blog for my 3 1/2 and 5 years olds. They are so much more manageable for Taco Tuesday than regular taco shells, plus my girls think they are getting something really special when eating their taco. I would recommend them for anyone with little ones to avoid everything falling all over the plate with the first bite. I never would have tried them without seeing them here!   4. Where do you find the taco boats? I can’t find them anywhere……

  5. I like to spread some refried beans on the bottom of the boat, and then top. I’ve also learned to make refried beans in the slow cooker, the dry beans are cheap, let the cooker do the work, and cut the sodium
