Most days I just have a protein shake. If I’m on vacation sometimes I do pancakes or bagels for a special treat. These Strawberry Lemon Poppy Seed Bagels are easy enough that you can whip it together in 10 minutes but have just enough effort that it looks like you tried. For another twist try toasting the bagels before you add the poppy seed mixture. So yummy!

Strawberry Lemon Poppy Seed Bagel
Servings: 1 bagel, 2 halves
Ingredients
  • 4 ounces cream cheese , softened
  • 1 tablespoon lemon juice
  • zest of half of a lemon
  • 2 tablespoons powdered sugar
  • ΒΌ teaspoon vanilla extract
  • ΒΌ teaspoon almond extract
  • 1 teaspoons poppy seeds
  • 1 Thomas Plain bagel
  • Β½ cup sliced strawberries
Instructions
  1. In a small bowl, combine the cream cheese, lemon juice and zest, powdered sugar, vanilla and almond extract, and poppy seeds. Mix well.
  2. Split the bagel and spread each generously with the cream cheese mixture. Top with sliced strawberries. Enjoy!

  7. This was a big hit with my kids (and me!) for an after school snack today! I was rushing and just squeezed half a lemon rather than measuring and the cream cheese ended up too runny. Anyway, I mixed in more cream cheese and it turned out just great! Thanks for a new idea!
