I always have mixed emotions on Mother’s Day. It’s a beautiful day to celebrate and recognize all that moms do. I’m so grateful to be a mother but always feel like there’s room for improvement on my part. My own mother is amazing and I can only hope to be half the mom she is.
After we did a little BTR (build-the-relationship), I couldn’t bring myself to cook them. I made my husband do it.
Mother Nature was celebrating Mother’s Day too. These baby birds just hatched in our Bougainvillea. Every time I peek my head in they open their mouths for food.
The best part about the day was that my husband cooked dinner. Steaks, crab cakes, potatoes au gratin, and these cheesecake stuffed strawberries that I’ve seen all over Pinterest. Our strawberries were the size of small apples! In case you want the recipe…it’s below.
Ingredients
- 1 lb large strawberries
- 1 (8 ounce) package cream cheese, softened
- 1/4 - 1/2 cup powdered sugar (depending on how sweet you want it)
- 1 teaspoon vanilla extract
- 1/4 - 1/2 cup graham cracker crumbs
Instructions
- Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some of them are hollow already. Prep all of the strawberries and set aside.
- In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture.
- Once strawberries are filled, sprinkle or dip the tops with graham cracker crumbs. If not serving immediately, refrigerate until serving.

I actually made it. Well I bought the flower and added netting and then made rosettes out of fabric.
I’ve made these before and then dipped them in chocolate too…makes them even better!!!

I agree Mothers Day is mixed emotion wise. I miss my Granny and my Grandma and my Mother-In-Law. My Mom is in the USA and I am here in Greece. Anyway! I enjoyed your pictures and how you spent your day. Your strawberries look very good!

I made the strawberries with my daughter with her using creamy white frosting from a can. Colored some frosting blue…left some white and piped it into berries for Memorial Day…looked and tasted great!
HI, I found this recipe on homestead and it links right to this page so I think that they shared it which is great for you because it spreads the word about your blog. The strawberries look great and I am going to try them for my next book club.
Why not take these one step further – and make them chocolate dipped, cheesecake stuffed strawberries . . . . evil.
I made these for a party and everyone loved them. I also dipped them in white chocolate then added blue sugar sprinkles for Memorial Day. One comment I have is to not make them ahead of time. Eat them the same day. I noticed that the next day they had a liquor taste to them and they were pretty soft.

FYI — You can cut the bottom of the strawberry to make a flat surface and they will stand upright on a serving try. Don’t slice so much that the filling will come out when you pipe it. A small flat surface is all they need.
This was my first Mother’s Day without mine so, also very bittersweet for me.

Of course it depends on the size of the strawberries but I would say around 25 strawberries.

I made these strawberries for a potluck gathering today and they were a huge hit!! I transported them in a lidded plastic container for deviled eggs, which kept them nice and neat since they didn’t move. This recipe is a real winner!!

I made something similar for Christmas eve instead of making cheesecake filling i used white chocolate cream cheese. It was delicious!
I just made them for my fiance for her birthday, I used the already made cheesecake mix from Philadelphia cream cheese, and drizzaling chocolate over top of them too.

I followed a link here to read the cheesecake recipe. I was touched by your opening words – as one of those “want to be moms” (we’ve been trying for six years), Mother’s Day is one of the most painful times of the year for me. My husband and I both have rockstar supermom mothers, and I enjoy celebrating them, but it takes all of my energy to not cry all day. It’s nice to know that someone cares and thinks about people like me on that day. I hope it doesn’t diminish your celebration too much, though. As a person who thinks about others so deeply, I bet you’re a fabulous, caring mother who deserves to be celebrated.
