Pistachio Cupcakes
If you guys are anything like me you are running around today trying to finish up last minute errands for Christmas. So here’s a quick recipe for Pistachio Cupcakes. I’m a sucker for anything pistachio. I love these because they are festive and have one of the fluffiest textures in a cupcake that I’ve ever had.

These cupcakes look great! Ive never been a pistachio fan until my husband made me a pistachio pudding and oreo ice cream cake! That sold me! (and the fact that he actually made me a dessert!) Thanks for sharing 🙂

Pudding mix?? Craziness! Those look delicious though – I have always enjoyed pistachios in desserts, but have never had them in a cupcake before! Love the color!
i wouldn’t have thought to use the pudding mix in frosting like that – the color is terrific!
