Brownie Bites with Fluffy Peanut Butter Frosting

With Valentine’s Day coming up I was thinking of a few of my favorite couples. Food couples that is…
Mac and cheese
burger and fries
milk and cookies
bacon and eggs
pancakes and syrup
spaghetti and meatballs

But my favorite couple of all time…peanut butter and chocolate.

Brownie Bites with Fluffy Peanut Butter Frosting

Ingredients

    Brownie Bites:
  • 1 boxed brownie mix (I think chocolate cupcakes would be yummy too)
  • 1 cup Reeses Peanut Butter chips (optional)
  • Peanut Butter Frosting
  • 1/2 cup butter, softened
  • 1 cup creamy peanut butter
  • 3 tablespoons milk, or as needed
  • 2 cups confectioners' sugar

Instructions

  1. Make brownie mix according to package directions. Add peanut butter chips if desired. Pour into paper lined mini muffin pans filling each cup about 3/4 full. Bake 14-18 minutes at 350 degrees or until toothpick comes out clean. Cool.
  2. For the frosting: Place the butter and peanut butter into a medium bowl, and beat with an electric mixer. Gradually mix in the sugar, and when it starts to get thick, incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick and spreadable. Beat for at least 3 minutes for it to get good and fluffy. Frost brownie bites with frosting. Pipe the frosting with a star tip if you are feeling fancy!

    I made this today for my fathers birthday and I used cupcake mix and they are perfect! My only advice is to do everything gradually when making the icing because if not, it turns out comply! I made this mistake and had to re ice mine!

  12. Made this yesterday for my son’s birthday party. He loves brownies and doesn’t care much for cake so this was perfect. The brownie stuck hard core to the cupcake wrapper through and it was really hard to peel it off. Did that happen to anyone else or did I just overcook the brownies maybe so it hardened to much into the wrapper?

    • The same thing just happened to me!:) Do you think we overcooked them? I’m trying to decide if I should make another batch and take them out of the oven even though they might still be gooey inside? What did you try?

    These are so delicious and so easy to make!! My boys especially loved the mini ones I made- bite sized! Perfect after a day at the pool! Unfortunately I sampled to much and now have a tummy ache!! Well worth it though! Thank you.
